Old Fashioned Frog's Eye Salad

Ingredientes

  • 1/2 c. Sugar
  • 1 Tbsp. All-purpose flour
  • 1/4 tsp Salt
  • 20 ounce Pineapple chunks, undrained
  • 8 ounce Crushed pineapple, undrained
  • 1 x Egg, beaten
  • 2 tsp Lemon juice
  • 8 ounce Acini Pepe, uncooked
  • 22 ounce Mandarin orange segments, liquid removed
  • 8 ounce Frzn non-dairy whipped topping, thawed
  • 3 c. Miniature marshmallows
  • 1/2 c. Flaked coconut
  •     Maraschino cherries

Direcciones

  1. Serve this old time favorite as a salad or possibly dessert.
  2. In medium saucepan; stir together sugar; flour and salt. Drain pineapple; reserving juice to equal 1 c. With whisk; gradually stir juice and egg into sugar mix. Cook over medium heat; stirring frequently; till mix comes to a boil. Stir in lemon juice. Cold mix to room temperature.
  3. Meanwhile; cook pasta according to package directions; drain. Rinse with cool water to cold quickly; drain well. In large bowl; stir together pineapple juice mix and pasta. Cover; chill several hrs or possibly overnight.
  4. Add in crushed pineapple and chunks; oranges; 2 c whipped topping; marshmallows and coconut; mix gently and thoroughly. Cover; chill till cool. Top with remaining whipped topping; garnish with cherries. 12 servings about 1 c each.
  5. Prep Time: 20 minutes.
  6. Start to Finish: 3 hours.
