- For Cake: Dissolve yeast and 1 tbsp sugar in water. Let stand 5 min. In a large mixing bowl, put together shortening, sugar, and egg. Gradually fold in 2 cups flour, lowfat milk, and yeast mix. Add in sufficient remaining flour to create a soft dough. Turn out onto a lightly floured surface and knead till smooth and elastic, about 6-8 min. Place dough in a greased bowl, turning to grease top. Cover and let rise in a warm place till doubled, about 1 hour.Punch dough down. Divide in half and press each half into a greased 7 x 11 inch baking pan. Cover and let rise till doubled, about 1 hour. Put together all topping ingredients, except peaches. Sprinkle over dough. Top with peach slices. Bake at 375 degrees for 25-30 min or possibly till golden. Yield: 2 Coffee cakes.
