Ingredientes

  • 1 1/2 c. flour measured after sifti
  • 2 Tbsp. sugar
  • 2 1/2 tsp baking pwdr
  • 3/4 tsp salt
  • 2 Tbsp. melted butter
  • 1 x egg lightly beaten, plus
  • 1 x egg yolk
  • 1 c. lowfat milk plus
  • 2 Tbsp. lowfat milk

Direcciones

  1. Resift flour with sugar, baking pwdr and 3/4 tsp. of salt. Combine melted butter, egg and yolk and whisk in lowfat milk. Preheat the griddle.
  2. With a few swift strokes fold the wet ingredients into the dry ones. Don't overmix; keep the batter lumpy so they will turn out light.
  3. Cook the pancakes on the griddle, using a scant 1/4 c. for each pancake. Turn them over when bubbles form over the entire surface of the pancake and cook for a few min on the other side.
  4. Serve warm with maple syrup. For dinner, serve warm with a saute/fry of apples and raisins and along with either slices of bacon or possibly topped with cottage or possibly ricotta cheese.
  5. This recipe yields 4 servings.
