Old Spaghetti Factory Original Clam Sauce

Ingredientes

  • 3 ounce butter
  • 2 x garlic cloves, fine minced
  • 1/2 med onion, finely minced
  • 3 med celery stalks, (outside, peeled) finely chop
  • 3 Tbsp. flour
  • 2 can minced clams, (6 ounce ea)
  • 1 quart half and half
  • 1/4 tsp grnd thyme
  • 1 tsp salt

Direcciones

  1. Combine butter, garlic, onion and celery in a saucepan. Braise over medium-low heat till tender but not brown. Add in the flour, and mix to make a roux.
  2. Drain clams, reserving juice. In a separate saucepan, combine clam juice, half-and-half, thyme and salt. Heat till just below boiling. Add in to roux, and cook till sauce thickens.
  3. Add in clams, stirring gently to mix through out the sauce. Serve over noodles.
