Ingredientes

  • 6 x hard-cooked Large eggs finely minced
  • 1/4 c. mayonnaise
  • 2 Tbsp. extra-virgin extra virgin olive oil
  • 2 Tbsp. minced black olives
  • 1 Tbsp. choppped sun-dry tomatoes in oil liquid removed
  • 1/8 tsp red-pepper flakes
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 8 x La Tortilla Factory garlic and
  •     herb tortillas
  • 1 c. arugula leaves

Direcciones

  1. Mix Large eggs, mayonnaise, extra virgin olive oil, black olives, sun-dry tomatoes and red-pepper flakes. Season to taste with salt and pepper.
  2. Hot tortillas between damp paper towels in microwave. Spread egg mix on tortillas, leaving a 1/2-inch border. Top with arugula leaves. Roll up tortillas.
  3. This recipe yields 4 servings.
