Receta Olive Egg Salad Tortillas

Ingredientes
- 6 x hard-cooked Large eggs finely minced
- 1/4 c. mayonnaise
- 2 Tbsp. extra-virgin extra virgin olive oil
- 2 Tbsp. minced black olives
- 1 Tbsp. choppped sun-dry tomatoes in oil liquid removed
- 1/8 tsp red-pepper flakes
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- 8 x La Tortilla Factory garlic and
- Â Â herb tortillas
- 1 c. arugula leaves
Direcciones
- Mix Large eggs, mayonnaise, extra virgin olive oil, black olives, sun-dry tomatoes and red-pepper flakes. Season to taste with salt and pepper.
- Hot tortillas between damp paper towels in microwave. Spread egg mix on tortillas, leaving a 1/2-inch border. Top with arugula leaves. Roll up tortillas.
