Receta Olive Oil Cookies With Red Wine And Rosemary

- Preheat the oven to 375 degrees. Combine the dry ingredients. Beat the Large eggs with the extra virgin olive oil and wine. Use a rubber spatula to stir the liquid mix into the dry one, till well combined. If the mix is stiff, add in a little more wine.
- Drop mix by rounded tsp. onto a lightly oiled cookie sheet, and bake 12 to 15 min, or possibly till lightly browned. Let cold a couple of min, then remove the cookies to a rack to cold further.
- Yield: about 4 dozen cookies.
- Extra virgin olive oil Sugar Cookies: Omit the pepper; the rosemary is optional. Increase the sugar to 1 c.. Use lowfat milk in place of red wine, and add in 1 tsp. vanilla extract to the mix. Bake as above.
