Receta Olive Oil Cookies With Red Wine And Rosemary

Ingredientes
- 2Â 1/2 c. Flour
- 1/2 tsp Baking pwdr
- 1 pch Salt
- 1/8 tsp Black pepper
- 1 tsp Chopped fresh rosemary or possibly 1/2 tsp. dry
- 3/4 c. Sugar
- 2 x Large eggs
- 1/2 c. Extra virgin olive oil plus a little for cookie sheet
- 3/4 c. Or possibly a little more, dry red wine
Direcciones
- 1. Preheat the oven to 375 degrees. Combine the dry ingredients. Beat the Large eggs with the extra virgin olive oil and wine. Use a rubber spatula to stir the liquid mix into the dry one, till well combined. If the mix is stiff, add in a little more wine.
- 2. Drop mix by rounded tsp. onto a lightly oiled cookie sheet, and bake 12 to 15 min, or possibly till lightly browned. Let cold a couple of min, then remove the cookies to a rack to cold further.
- Yield: about 4 dozen cookies.
- Extra virgin olive oil Sugar Cookies: Omit the pepper; the rosemary is optional. Increase the sugar to 1 c.. Use lowfat milk in place of red wine, and add in 1 tsp. vanilla extract to the mix. Bake as above.
