Omelette Soup ( Minestra Di Frittata)

Ingredientes

  • 1 1/5 lt Brodo di Pollo (qv)
  • 2 x Large eggs
  • 1 x tablespoonflour
  • 4 Tbsp. lowfat milk
  • 1 x salt and pepper
  • 25 gm grated Parmesan cheese
  •     minced parsley to garnish

Direcciones

  1. Bring the Brodo di pollo to the boil in a large pan.
  2. Beat the Large eggs with the flour lowfat milk and a little salt and pepper.
  3. Lightly oil a large frying pan and place over high heat.
  4. When very warm pour in the batter and cook for about 1 minute till set.
  5. Turn out roll up and cut into thin strips.
  6. Add in to the boiling broth with the cheese.
  7. Serve immediately sprinkled with parsley.
  8. Serves 4
