,%20and%20agonize%20over%20the%20hanging%20of%20every.%20single.%20ornament.%20Martha%20Stewart,%20I%20feel%20your%20pain.%20Okay,%20not%20really.All%20the%20Christmas%20trees.%20ALL%20OF%20THEM.%20-%20Photos%20by%20Wasabi%20PrimeI%20MUST%20see/do/experience%20as%20much%20holiday-type-stuff%20as%20possible!%20Braving%20crowds,%20crazy%20hordes%20of%20mallrats%20with%20ridiculous-sized%20strollers,%20holiday%20shopping%20extravaganzas,%20and%20then%20drink.%20Repeat%20as%20necessary,%20especially%20the%20last%20part.Blinded%20by%20the%20light...%20then%20wine%20-%20Photos%20by%20Wasabi%20PrimeSomehow%20amid%20all%20of%20this,%20there's%20holiday%20gatherings%20and%20dinners%20where%20you%20want%20to%20bring%20something%20delicious%20and%20more%20special%20than%20a%20box%20of%20Ritz%20crackers%20and%20a%20can%20of%20Cheez-Whiz.%20Not%20that%20there's%20anything%20wrong%20with%20that%20when%20it's%20just%20you%20and%20your%20lonesome%20on%20a%20Friday%20night.%20I%20put%20together%20these%20two%20dishes%20around%20Thanksgiving,%20thinking%20of%20things%20that%20could%20be%20prepped%20ahead%20and%20then%20travel%20relatively%20easily%20to%20its%20final%20destination%20of%20consummation.%3C/p%3E%3Cp%3EThe%20appetizers%20are%20a%20riff%20off%20a%20Martha%20Stewart%20recipe%20I%20saw%20in%20one%20of%20her%20magazines,%20wrapping%20bresaola%20around%20slices%20of%20persimmon,%20which%20is%20apparently%20not%20just%20a%20Martha-thing,%20Bon%20Appetit%20did%20the%20same%20thing%20as%20well,%20but%20with%20arugula.%20I%20upped%20the%20ingredient%20ante%20by%20smearing%20some%20cranberry%20goat%20cheese%20over%20a%20slice%20of%20fuyu%20persimmon,%20and%20using%20pancetta%20instead%20of%20bresaola,%20just%20because%20in%20the%20madness%20of%20holiday%20shopping,%20you%20work%20with%20what%20you've%20got.%20I%20had%20to%20use%20prosciutto%20for%20Thanksgiving%20because%20all%20the%20pancetta%20was%20sold%20out,%20so%20that's%20another%20nice%20thing%20about%20the%20recipe,%20it's%20fairly%20flexible%20with%20the%20cured%20meats,%20as%20long%20as%20it's%20thinly%20sliced.%20It%20doesn't%20have%20to%20be%20cranberry%20goat%20cheese%20--%20Costco%20didn't%20have%20any%20plain%20chevre,%20just%20these%20cranberry-spice-covered%20goat%20cheese%20logs%20and%20I%20figured%20it%20would%20just%20save%20a%20step%20on%20seasoning%20the%20cheese.%20Adding%20a%20finish%20of%20honey%20syrup%20and%20smoked%20or%20red%20volcanic%20Hawaiian%20salt%20is%20mostly%20me%20using%20up%20fancy%20honey%20and%20salts%20that%20I%20horde%20in%20my%20pantry.%20I'm%20sure%20you%20have%20some%20of%20those%20fancy%20salts%20as%20well,%20always%20wondering%20what%20the%20hell%20to%20do%20with%20them%20--%20here's%20your%20chance%20to%20rock%20the%20finishing%20salts!%3C/p%3E%3Cp%3EThe%20pancetta/prosciutto-wrapped%20persimmons%20are%20total%20UnRecipe%20appetizers.%20The%20persimmons%20are%20raw%20--%20just%20clean%20them%20and%20slice%20into%20small,%20bite%20sizes.%20Use%20the%20fuyu%20persimmons.%20There%20might%20be%20seeds,%20so%20just%20remove%20them.%20A%20smear%20of%20goat%20cheese%20(plain%20is%20fine),%20then%20wrapping%20with%20enough%20of%20the%20cured%20meat%20to%20make%20them%20into%20a%20neat%20bundle.%20You%20can%20even%20prepare%20them%20the%20night%20before,%20since%20persimmons%20aren't%20like%20apples%20or%20pears,%20which%20discolor.%20Right%20before%20plating%20and%20serving,%20sprinkle%20with%20some%20fancy%20salt,%20or%20just%20a%20quick%20grind%20of%20fresh-cracked%20pepper,%20and%20drizzle%20with%20watered-down%20honey.%20Or%20skip%20the%20honey%20completely%20--%20it's%20not%20a%20requirement,%20it%20just%20adds%20a%20little%20extra%20sweetness.%3C/p%3E%3Cp%3EDessert%20and%20appetizers%20--%20easy%20prep%20and%20ready%20for%20a%20party%20in%20a%20snap%20-%20Photos%20by%20Wasabi%20PrimeFor%20dessert,%20I%20know%20tiramisu%20is%20so%201990-whatever,%20but%20one%20of%20the%20reasons%20why%20it's%20the%20dessert%20that%20refuses%20to%20die%20is%20because%20it's%20a%20great%20make-ahead%20dish.%20It%20pretty%20much%20requires%20an%20overnight%20chill,%20just%20to%20get%20all%20the%20flavors%20to%20fully%20soak%20into%20all%20the%20layers.%20This%20version%20is%20of%20course%20Thanksgiving-themed,%20since%20it's%20using%20pumpkin%20puree,%20but%20you%20can%20always%20flavor%20it%20with%20whatever%20you%20like.%20Or%20if%20you're%20like%20me,%20you%20may%20have%20an%20extra%20can%20of%20pumpkin%20puree%20from%20Turkeyday,%20so%20keep%20rocking%20the%20squash.%20The%20canned%20stuff%20is%20actually%20best%20to%20use,%20since%20this%20dessert%20has%20such%20a%20silky%20texture,%20you%20don't%20want%20the%20rustic%20bite%20of%20a%20pumpkin%20chunk.%20Instead%20of%20ladyfingers,%20I%20used%20crushed%20gingersnaps%20for%20the%20bready-cookie%20layer.%20And%20I%20mix%20some%20rum%20with%20coffee,%20to%20soak%20the%20cookie%20layer.%3C/p%3E%3Cp%3EPumpkin%20Tiramisu%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EUsing%20a%20whisk%20or%20mixer,%20whip%20the%20heavy%20cream%20with%20the%20sugar%20until%20stiff%20peaks%20form.%20Add%20the%20vanilla%20extract.%20Carefully%20add%20the%20pumpkin%20puree%20and%20mascarpone%20cheese%20in%20spoonfuls,%20incorporating%20evenly,%20but%20making%20sure%20the%20whipped%20cream%20doesn't%20lose%20its%20light%20texture.%3C/p%3E%3Cp%3ETo%20form%20the%20tiramisu,%20place%20a%20layer%20of%20the%20crushed%20gingersnaps%20down,%20drizzle%20lightly%20with%20the%20coffee/rum%20mixture,%20then%20an%20even%20layer%20of%20the%20pumpkin%20cream,%20repeat%20with%20the%20gingersnaps%20and%20rum/coffee%20until%20you%20run%20out%20of%20ingredients,%20and%20the%20final,%20finished%20layer%20is%20the%20crushed%20gingersnaps.%20This%20can%20be%20done%20in%20small%20dessert%20glasses%20or%20cups%20for%20single%20servings,%20or%20in%20a%20large%20casserole%20or%20souffle-style%20dish%20for%20a%20%20family-style%20dessert.%3C/p%3E%3Cp%3ECover%20the%20layered%20dessert%20with%20plastic%20wrap%20and%20refrigerate%20until%20ready%20to%20serve.%3C/p%3E){kind=link}
