Once in a Lifetime Baked Apple & Pear Squash
You may find yourself…staring at a wonderful squash.
You may find yourself…with a bright red apple and a pear.
You may find yourself...with some beautiful raisins and some beautiful spices
and
You may ask yourself…well, where do I go from here?
My suggestion: Give this baked squash recipe a try. It tastes great and the bonus is it fills your kitchen with the amazing aromas of apple and cinnamon. It smells better than walking past a Cinnabon outlet!
You may have noticed that the notes of the Talking Heads' song “Once in a Lifetime” were floating around my kitchen while I was making this dish. If that isn’t apparent (except for the title) give the song a listen and you’ll quickly understand what I mean. Although I used a hubbard squash for this recipe, I think an acorn squash would work even better!
Once in a Lifetime Baked Apple & Pear Squash
- Baked squash topped with sweet apples, pears, raisins, brown sugar and cinnamon
- Instruments
- 1 medium squash (Acorn or Hubbard), cut into quarters (remove seeds)
- 2 tsp butter, divided
- 1 pear, peeled cored and diced
- 1 apple, peeled cored and diced
- ¼ cup raisins
- 1 tbsp freshly squeezed lemon juice
- 1 tsp brown sugar
- ¼ tsp ground cinnamon
- Pinch or two ground nutmeg
Lyrics
Line a baking sheet with aluminum foil. Place squash on the baking sheet skin side down. Place ½ tsp butter in the middle of each quarter. Cover with aluminum foil and bake in a 375 degree oven for 30 minutes.
Meanwhile, in a medium bowl, combine pears, apples, raisins, lemon juice, brown sugar, cinnamon and nutmeg. Gently mix until combined.
Remove squash from oven and top each quarter with equal amounts of apple and pear mixture. Cover with foil and return squash to oven. Bake until squash is fork tender, about 20 to 30 minutes more. Serve warm.
