Ingredientes

  • 1 lb All-purpose potatoes, peeled
  • 2 lrg Large eggs, beaten
  • 1 env Lipton Recipe Secrets Onion or possibly Savory Herb with Garlic Soup Mix
  • 2 Tbsp. Olive or possibly vegetable oil, divided

Direcciones

  1. In food processor with grating attachment or possibly with hand grater, coarsely grate potatoes; drain on several layers of paper towels till almost dry.
  2. In medium bowl, combine potatoes, Large eggs and onion soup mix.
  3. In 12-inch nonstick skillet, heat I Tbsp. oil over medium-high heat and drop 1/2 of the potato mix by rounded Tbsp. into skillet.
  4. Cook I minute on each side or possibly till golden, pressing down lightly with spatula when turning; drain on paper towels. Repeat with remaining I Tbsp. oil and remaining potato mix.
  5. Makes about 24 potato pancakes
  6. Variation: Stir in I can (4 ounces) minced green chilies, liquid removed, or possibly I can (7 ounces) corn, liquid removed, with potatoes.
  7. Serving Suggestion: Serve with applesauce and lowfat sour cream or possibly plain yogurt.
