until%20tender.%20Season%20with%201/2%20tsp%20salt%20and%20pepper.%20Add%20a%20splash%20of%20dry%20white%20wine.%20Saute%20it%20until%20cooked%20though%20and%20wine%20is%20evaporated.%3C/p%3E%3Cp%3EBaguette:%3C/p%3E%3Cp%3ESlightly%20toast%20baguette%20under%20broiler%20for%20a%20few%20mins.%20Take%20them%20out%20and%20spread%20butter%20all%20over%20(about%201%20tbs%20per%20slice).%20Bring%20it%20back%20in%20and%20toast%20for%20a%20few%20mins%20until%20butter%20melted.%3C/p%3E%3Cp%3EAssemble:%3C/p%3E%3Cp%3ESpread%20eggplant%20tomato%20puree%20on%20toasted%20baguette%20about%201/4%20thickness.%20Place%20mushrooms%20on%20top.%20Place%20provolone%20slices%20on%20top.%20Bring%20it%20back%20in%20the%20broiler.%20Broil%20it%20until%20the%20cheese%20is%20getting%20to%20melt.%20Take%20it%20out%20and%20add%20sliced%20tomato%20(%20I%20added%202%20halved%20slices),%20then%20top%20with%20sliced%20provolone%20cheese.%20Yes%20double%20cheese%20layer!%3C/p%3E%3Cp%3EToast%20it%20under%20broiler%20until%20cheese%20melts.%20Garnish%20with%20radish%20sprout.%20Serve%20with%20pickled%20carrots.%3C/p%3E%3Cp%3EBeautiful%20organic%20baby%20carrotsVinegar%20Pickled%20Carrots:Yield:%201%20quart%3C/p%3E%3Cp%3E1%20bundle%20fresh%20baby%20carrots%3C/p%3E%3Cp%3E1%20cup%20water%3C/p%3E%3Cp%3E1/2%20cup%20rice%20wine%20vinegar%3C/p%3E%3Cp%3E6%20tbs%20sugar%3C/p%3E%3Cp%3E2%201/4%20tsp%20salt%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EMix%20everything%20in%20a%20bowl.%20Pop%20it%20in%20a%20microwave%20high%20heat%20for%201%20min.%20Just%20to%20dissolve%20sugar.%20Whisk%20well.%3C/p%3E%3Cp%3EPeel%20carrots%20and%20leave%20the%20top%20green%20part%20about%202%20inches%20or%20so.%3C/p%3E%3Cp%3EPlace%20carrots%20in%20a%20shallow%20tray%20and%20pour%20in%20vinegar%20mixture.%20Pickle%20them%20in%20a%20fridge%20for%20at%20least%201%20hr.%20This%20can%20be%20kept%20in%20an%20air-tight%20container%20for%20weeks.%20The%20flavor%20will%20become%20stronger%20as%20time%20goes%20by.%3C/p%3E%3Cp%3ERe-hydrating%20dried%20mushroomsRoasted%20eggplant,%20tomatoes,%20and%20sageThe%20pureeSauted%20mushroomsServe%20with%20pickled%20baby%20carrotWant%20a%20bite?%3C/p%3E){kind=link}
