Ingredientes

  • 2 c. shelled edamame (green soybeans), frzn
  • 4 sm oranges
  • 1/2 c. finely minced fresh parsley
  • 1/4 c. finely sliced red onions
  • 6 x chopped green onions
  • 2 Tbsp. vegetable oil
  • 2 Tbsp. red wine vinegar

Direcciones

  1. Bring a saucepan of salted water to boil. Add in edamame and cook 3 to 5 min. Drain and rinse under cool water.
  2. Grate peel (orange part only) from one orange and set aside. Peel all of the oranges and cut segments from membrane, cutting into bite-size pcs.
  3. In a bowl, combine orange pcs and edamame with parsley and onions.
  4. Mix orange peel with oil and vinegar. Pour over edamame mix. Refrigeratebefore serving.
