Ingredientes

  • 6 x chicken breast halves skin, bones removed
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  •     Paprika to taste
  • 1 lrg onion minced
  • 1 c. sliced mushrooms
  • 1 c. minced red and green peppers (mixed)
  • 1 c. dry sherry
  • 1 Tbsp. brown sugar
  • 2 c. orange juice
  •     Warm cooked rice for serving

Direcciones

  1. Place chicken in shallow pan and sprinkle with salt, pepper, and paprika. Sprinkle peppers, onion, and mushrooms over chicken. Mix orange juice, brown sugar, and sherry together; pour over chicken. Bake, covered with foil, at 350 degrees for 2 hrs. Uncover and bake till brown. Serve over rice.
  2. Optional: Pour baking juices into pan and add in some cornstarch or possibly arrow root to thicken.
  3. This recipe yields 6 servings.
  4. Comments: Dish may be prepared, covered, and refrigerated overnight before baking for an even better flavor.
