%3C/p%3E%3Cp%3EI%20piped%20whipping%20cream%20into%20each%20cup%20cakes.%20just%20so%20to%20start%20using%20the%20carton%20of%20non-dairy%20whipping%20cream%20I%20bought%20a%20month%20ago.%20The%20end%20result%20looks%20quite%20similar%20to%20the%20popular%20Hokkaido%20chiffon%20cake%20though.%3C/p%3E%3Cp%3EThe%20chiffon%20cake%20texture%20was%20soft%20and%20light%20although%20they%20were%20baked%20in%20paper%20cups.%20While%20baking%20in%20the%20oven,%20they%20rose%20beautifully%20over%20the%20rim,%20almost%20on%20the%20verge%20of%20overflowing.%20Most%20of%20them%20cracked...but%20I%20have%20no%20issues%20with%20cracked%20chiffon%20cakes,%20in%20fact%20I%20love%20the%20cracks%20;)%3C/p%3E%3Cp%3EOnce%20out%20of%20the%20oven,%20they%20started%20to%20shrink,%20I%20didn't%20invert%20the%20cakes%20(or%20should%20I??)%20and%20left%20them%20to%20cool%20right%20side%20up.%20Very%20soon,%20the%20cakes%20deflated%20to%20just%20the%20right%20height...not%20falling%20short%20of%20the%20base%20of%20the%20four%20flaps%20on%20each%20square%20cup.%20It%20was%20my%20first%20attempt%20at%20piping%20cream%20into%20a%20cup%20cake.%20I%20have%20no%20idea%20how%20to%20go%20about%20it%20but%20to%20rely%20on%20my%20gut%20feel.%20I%20simply%20forced%20the%20piping%20tip%20into%20the%20centre%20of%20the%20cake%20and%20squeeze%20in%20as%20much%20cream%20I%20could,%20I%20stopped%20piping%20when%20the%20cream%20started%20flowing%20out%20from%20the%20side%20of%20the%20piping%20tip.%20I%20used%20the%20remaining%20cream%20to%20pipe%20rosettes%20on%20the%20tops,%20so%20as%20to%20cover%20the%20holes.%20I%20kept%20my%20fingers%20crossed%20that%20I%20was%20doing%20the%20right%20thing...that%20I%20got%20enough%20whipping%20cream%20into%20the%20cake.%20Fortunately,%20these%20little%20cuppies%20were%20meant%20for%20family,%20I%20have%20no%20qualms%20about%20giving%20away%20half-filled%20cakes%20to%20family%20members,%20actually%20I%20didn't%20even%20taste%20one%20before%20I%20gave%20them%20away,%20something%20I%20wouldn't%20do%20if%20they%20were%20meant%20for%20friends%20;)%3C/p%3E%3Cp%3EIt%20turn%20out%20that%20I%20got%20the%20piping%20right%20as%20the%20cuppies%20were%20filled%20with%20quite%20a%20substantial%20amount%20of%20cream,%20although%20I%20think%20the%20cakes%20could%20take%20in%20more.%20The%20taste,%20at%20least%20the%20whipping%20cream,%20was%20rather%20close%20to%20those%20store%20bought%20Hokkaido%20cake%20which%20I%20have%20tried.%20I%20received%20positive%20comments%20such%20as...'they%20taste%20better%20than%20store%20bought%20ones'.%20Credit%20must%20go%20to%20the%20orange%20chiffon%20cake%20recipe%20which%20I%20have%20taken%20from%20my%20favourite%20chiffon%20cake%20book,%20%E5%A5%BD%E5%90%83%E6%88%9A%E9%A3%8E%E8%9B%8B%E7%B3%95%E8%BD%BB%E6%9D%BE%E4%B8%8A%E6%89%8B.%20The%20cake%20was%20delicious%20and%20full%20of%20flavors%20as%20they%20were%20made%20with%20orange%20juice,%20orange%20zest%20and%20Cointreau%20(an%20orange-flavoured%20liqueur)...another%20baking%20ingredients%20which%20I%20have%20just%20used%20even%20though%20I%20bought%20it%20more%20than%20a%20year%20ago.%3C/p%3E%3Cp%3EWith%20this%20little%20experience%20I%20have%20gained,%20I%20expect%20myself%20to%20bake%20some%20real%20Hokkiado%20chiffon%20cupcakes%20soon...%3C/p%3E%3Cp%3EOrange%20Chiffon%20Cake%20in%20cups%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPlace%20egg%20yolks%20in%20a%20mixing%20bowl.%20With%20a%20manual%20hand%20whisk,%20whisk%20the%20yolks%20a%20little.%20Add%20in%20sugar%20and%20whisk%20till%20the%20batter%20turns%20pale%20and%20thick%20(about%205%20mins%20by%20hand).%20Add%20in%20vegetable%20oil%20gradually,%20whisk%20to%20combine.%20Add%20orange%20juice,%20cointreau%20and%20orange%20zest,%20whisk%20to%20combine.%20Sieve%20over%20the%20flour%20and%20whisk%20till%20the%20flour%20is%20fully%20incorporated.%20Do%20not%20over%20mix.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20clean,%20dry%20mixing%20bowl,%20beat%20egg%20whites%20with%20a%20handheld%20electric%20mixer%20on%20low%20speed%20until%20mixture%20becomes%20frothy%20and%20foamy.%20Add%20half%20of%20the%20sugar%20amount%20and%20turn%20to%20high%20speed%20and%20beat%20the%20mixture.%20Continue%20to%20add%20in%20the%20remaining%20sugar%20and%20beat%20until%20the%20egg%20whites%20reaches%20the%20soft%20peak%20stage.The%20soft%20peak%20stage%20is%20reached%20when%20the%20peaks%20of%20the%20whites%20curl%20over%20and%20droop%20slightly.%20The%20egg%20whites%20should%20appear%20smooth%20and%20glossy.%20(Do%20not%20over%20beat%20the%20whites%20still%20stiff,%20it%20is%20better%20to%20beat%20the%20whites%20still%20soft%20peaks%20for%20easy%20folding%20with%20the%20yolk%20batter.)%3C/p%3E%3Cp%3EAdd%20the%20beaten%20egg%20whites%20into%20the%20egg%20yolk%20batter%20in%203%20separate%20additions,%20each%20time%20folding%20gently%20with%20a%20spatula%20until%20just%20blended.%3C/p%3E%3Cp%3EPour%20batter%20into%20paper%20cups%20till%20it%20reaches%20just%20before%20the%20base%20of%20the%20flaps.%20Place%20paper%20
