%3C/p%3E%3Cp%3EHere's%20sharing%20a%20simple%20fume%20free%20dish%20with%20anyone%20who%20hates%20cleaning%20up%20an%20oily%20kitchen%20after%20frying%20fish.%20No,%20I%20am%20not%20talking%20about%20using%20cookwares%20such%20as%20the%20happycall%20pans,%20which%20I%20don't%20own%20any...but%20grilling%20fish%20with%20my%20trustworthy%20oven%20;)%3C/p%3E%3Cp%3EIt%20was%20really%20by%20chance%20and%20a%20real%20coincident%20when%20I%20saw%20whole%20mackerel%20or%20saba%20fish%20at%20the%20wet%20market.%20I%20had%20actually%20cooked%20the%20same%20dish%20the%20night%20before,%20but%20with%20frozen%20saba%20fillets%20not%20the%20whole%20fish.%20The%20fish%20wasn't%20that%20expensive,%20at%20four%20dollars%20for%20one%20whole%20fish%20which%20worked%20out%20to%20be%20almost%20the%20same%20price%20as%20the%20frozen%20fillets%20I%20bought%20earlier.%3C/p%3E%3Cp%3EFrom%20lesson%20learned%20the%20night%20before,%20I%20realised%20mackerel%20is%20a%20very%20oily%20fish!%20The%20fillets%20were%20literally%20sitting%20on%20a%20tray%20of%20oil%20after%20they%20were%20out%20from%20the%20oven.%20The%20skin%20side%20was%20very%20crispy%20but%20not%20the%20meat%20side.%20For%20the%20whole%20fish,%20I%20did%20a%20little%20improvisation.%20I%20first%20lined%20my%20roasting%20pan%20with%20foil,%20to%20help%20in%20easy%20cleaning,%20before%20placing%20the%20rack%20inside%20the%20pan.%20I%20then%20cut%20a%20sheet%20of%20baking%20paper,%20that%20fits%20just%20nicely%20over%20the%20rack.%20The%20baking%20paper%20prevents%20the%20fish%20from%20sticking%20onto%20the%20rack%20and%20I%20won't%20have%20the%20tough%20job%20of%20scrubbing%20the%20rack%20later%20(you%20could%20use%20foil%20too,%20but%20I%20try%20not%20to%20have%20my%20food%20come%20into%20direct%20contact%20with%20aluminum%20foil).%20To%20allow%20the%20oil%20to%20drip%20down%20the%20rack,%20so%20that%20the%20fish%20would%20not%20be%20swimming%20in%20its%20own%20oil,%20I%20cut%20random%20small%20holes%20on%20the%20baking%20paper.%20All%20you%20need%20to%20do%20is%20to%20hold%20the%20paper%20a%20few%20times,%20and%20snip%20off%20small%20corners%20on%20the%20folds.%3C/p%3E%3Cp%3EWith%20my%20limited%20knowledge,%20I%20have%20always%20thought%20that%20cutting%20slits%20on%20fish%20helps%20it%20to%20cook%20faster,%20gets%20it%20cooked%20through%20and%20also%20for%20it%20to%20be%20well%20marinated.%20But%20for%20grilling%20saba%20fish,%20I%20learned%20that%20the%20slits%20also%20help%20prevent%20the%20skin%20from%20'bursting'%20or%20'shrinking'%20as%20it%20cooks%20in%20the%20oven.%20So%20this%20is%20a%20step%20that%20one%20shouldn't%20over%20look.%3C/p%3E%3Cp%3EThe%20mackerels%20were%20only%20lightly%20seasoned%20with%20salt%20and%20pepper,%20nothing%20else.%20I%20set%20the%20oven%20to%20the%20grill%20or%20is%20it%20broil(?)%20function...that%20is,%20top%20heat%20with%20fan%20mode.%20The%20fishes%20are%20cooked%20on%20high%20heat%20so%20that%20the%20skin%20is%20crispy%20but%20the%20inside%20is%20cooked%20through%20but%20moist%20and%20juicy.%20Never%20over%20cook%20saba%20as%20it%20tends%20to%20turn%20dry%20rather%20quickly.%3C/p%3E%3Cp%3EGorgeous%20grilled%20mackerels%20from%20my%20oven!%20I%20would%20probably%20end%20up%20with%20a%20plate%20of%20torn%20and%20tattered%20fishes%20if%20I%20were%20to%20pan%20fry%20them%20in%20the%20wok%20;)%3C/p%3E%3Cp%3EI%20was%20pleasantly%20surprised%20at%20how%20moist%20and%20juicy%20the%20mackerels%20had%20turned%20out.%20It%20reminds%20me%20of%20the%20grilled%20mackerels%20we%20had%20in%20Seoul.%20%20My%20kids%20and%20I%20had%20a%20great%20time%20enjoying%20our%20long%20dinner...we%20cleaned%20up%20the%20mackerels%20from%20head%20to%20tail...even%20my%20younger%20child%20enjoyed%20eating%20the%20fish%20head%20and%20found%20it%20amusing%20feeding%20his%20brother%20with%20the%20fish%20eye...his%20way%20of%20showing%20his%20affections%20towards%20his%20brother%20;)%20The%20only%20downside%20was,%20mackerels%20have%20got%20lots%20of%20fish%20bones!%20I%20had%20to%20keep%20reminding%20them%20to%20be%20careful%20and%20not%20to%20talk%20when%20eating%20the%20fish.%20You%20bet,%20this%20dish%20is%20going%20to%20be%20a%20regular%20on%20our%20dinning%20table.%20Never%20mind%20that%20my%20cooking%20skills%20hardly%20improves,%20such%20simple%20and%20easy%20meal%20is%20the%20way%20to%20go,%20for%20me.%3C/p%3E%3Cp%3EOven%20Grilled%20Mackerel%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EPreparation:%3C/p%3E%3Cp%3EClean%20and%20rinse%20the%20fish%20and%20pat%20dry%20with%20kitchen%20paper%20towels.%20Cut%20several%20slits%20on%20both%20sides%20(do%20not%20cut%20through).%20Rub%20some%20salt%20inside%20the%20fish%20and%20on%20the%20skin.%20Set%20aside%20for%20about%2030%20minutes.%20The%20salt%20will%20draw%20out%20some%20of%20the%20fishy%20taste.%3C/p%3E%3Cp%3ESet%20oven%20to%20Grill%20or%20Broil%20function%20and%20preheat%20to%20200%20degC.%3C/p%3E%3Cp%3ERinse%20the%20fishes%20again.%20Pat%20dry%20thoroughly%20with%20paper%20towels.%3C/p%3E%3Cp%3ELightly%20rub%20skin%20with%20a%20little%20olive%20oil%20(just%20to%20prevent%20sticking).%20Lightly%20sprinkle%20some%20salt%20and%20freshly%20grounded%20black%20pepper%20on%20both%20sides.%3C/p%3E%3Cp%3ESet%20the%20fish%20on%20a%20baking%20tray%20lined%20with%20foil%20(lightly%20oil%20the%20foil),%20or%20on%20the%20rack%20of%20a%20roasting%20pan%20(line%20the%20pan%20with%20foil%20and%20brush%20the%20rack%20with%20oil,%20or%20line%20the%20rack%20with%20parchment%20paper%20as%20described%20above).%3C/p%3E%3Cp%3ECook%20fish%20(place%20it%20at%20a%20higher%20rack%20position,%20nearer%20to%20the%20top%20heat)%20in%20preheated%20oven%20for%2010~12%20mins,%20turning%20once%20in%20between.%20Do%20not%20overcook.%20Transfer%20fish%20to%20a%20serving%20plate%20and%20serve%20immediately%20with%20lemon%20or%20lime%20wedges.%3C/p%3E){kind=link}
