,%20plus%20a%20Puerto%20Rican%20roast%20pork%20(Lechon%20Asado),%20I%20knew%20that%20it%20would%20be%20more%20appropriate%20to%20put%20my%20Pernil%20recipe%20here%20on%20the%20blog.%3C/p%3E%3Cp%3EPernil%20is%20a%20roasted%20pork%20shoulder%20popular%20in%20Puerto%20Rico,%20often%20served%20during%20holidays.%20It%20is%20derived%20from%20the%20Spanish%20word%20pierno%20(leg),%20likely%20because%20it%20was%20originally%20made%20with%20the%20hind%20end,%20but%20since%20most%20hind%20quarters%20are%20used%20to%20make%20ham%20nowadays%20it%20makes%20sense%20that%20the%20cheaper%20shoulder%20is%20the%20cut%20of%20choice%20today.%20One%20particular%20trait%20of%20Pernil%20is%20the%20use%20of%20an%20adobo%20mojado,%20or%20wet%20marinade,%20which%20is%20created%20by%20using%20bitter%20orange%20juice%20(I%20used%20orange%20and%20lime%20juices)%20and%20a%20little%20vinegar%20to%20add%20moisture%20and%20tenderize%20the%20meat.%3C/p%3E%3Cp%3EAlthough%20roasting%20a%20pork%20shoulder%20in%20the%20oven%20would%20be%20considered%20cheating%20here%20in%20the%20US,%20Pernil%20is%20surprisingly%20roasted%20in%20an%20oven%20on%20an%20almost%20exclusive%20basis.%20I%20can%20see%20why,%20since%20oven-roasting%20makes%20this%20dish%20dead-simple%20to%20make.%20I%20did%20add%20a%20smidge%20of%20liquid%20smoke%20to%20boost%20the%20roast%E2%80%99s%20flavor,%20but%20otherwise%20I%20kept%20the%20recipe%20true%20to%20what%20I%20found%20in%20most%20Puerto%20Rican%20cookbooks.%3C/p%3E%3Cp%3E1.%20Using%20a%20sharp%20knife,%20make%201/2%E2%80%B3%20deep%20cuts%20all%20over%20the%20pork%20shoulder.%20Combine%20the%20marinade%20ingredients,%20then%20add%20the%20marinade%20and%20pork%20to%20a%20resealable%20plastic%20bag.%20Marinate%20overnight.%3C/p%3E%3Cp%3E2.%20Preheat%20your%20oven%20to%20450F.%20Place%20the%20shoulder%20in%20a%20roasting%20pan,%20along%20with%20the%20marinade.%20Add%20more%20water%20around%20the%20pork%20if%20needed%20%E2%80%93%20you%E2%80%99re%20looking%20for%20at%20least%201/2%E2%80%B3%20of%20liquid%20in%20the%20pan.%20Place%20in%20the%20oven,%20uncovered,%20and%20roast%20for%20one%20hour.%3C/p%3E%3Cp%3E3.%20Remove%20the%20pork%20from%20the%20oven%20and%20baste%20with%20the%20marinade%20liquid.%20Cover%20with%20heavy%20duty%20tin%20foil,%20reduce%20the%20oven%20heat%20to%20250F%20and%20roast%20until%20its%20internal%20temperature%20reaches%20190F,%20about%206-8%20hours.%20Remove%20from%20the%20oven,%20and%20allow%20to%20rest%20(with%20the%20tin%20foil%20covering%20it)%20for%2030%20minutes.%20Pour%20out%20the%20liquid%20and%20set%20aside,%20then%20shred%20with%20tongs%20or%20some%20forks,%20adding%20in%20about%20half%20of%20the%20liquid%20to%20moisten%20the%20meat.%3C/p%3E%3Cp%3E**%20I%20recommend%20using%20a%20quick-read%20thermometer%20or%20a%20remote%20thermometer%20to%20best%20observe%20the%20pork%E2%80%99s%20internal%20temperature.%3C/p%3E%3Cp%3EThe%20juices%20and%20sweetener%20(coconut%20palm%20sugar%20or%20honey)%20will%20cause%20the%20roast%20to%20brown%20during%20the%20initial%20high-heat%20stage,%20similar%20to%20the%20%E2%80%9Cbark%E2%80%9D%20you%20get%20when%20making%20BBQ%20pulled%20pork%20in%20a%20smoker.%3C/p%3E%3Cp%3EI%20know,%20it%E2%80%99s%20not%20the%20prettiest,%20but%20man%20is%20it%20tasty.%20Serve%20it%20with%20rice%20or%20plantains.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E%3Cp%3ETags:%20baking,%20cooking,%20dinner,%20epicurious,%20food,%20gluten%20free,%20jerf,%20oven,%20paleo,%20pig,%20pork,%20primal,%20puerto%20rico%3C/p%3E){kind=link}
