Oyster Soup With Fresh And Smoked Oysters

Ingredientes

  • 6 slc Bacon, cut into thin strips
  • 1 lrg Onion, cut into fine dice
  • 1 lrg Leek, white part only, sliced thin
  • 1 lrg Red potato *
  • 1 c. Whipping cream
  • 4 c. Lowfat milk
  • 1/2 c. Bottled clam juice
  • 4 c. Packed young spinach leaves
  • 16 x Fresh oysters and their liquor
  • 7 ounce Smoked oysters **
  • 1/2 tsp Salt
  •     Freshly grnd white pepper

Direcciones

  1. Peeled and cut into 1/2inch dice** well rinsed in cool water, gently patted dry
  2. Cook the bacon in a 3-qt pot over medium high heat till lightly browned, about 4 min.
  3. Add in the onion and leek and cook till softened, about 4 min, stirring often.
  4. Add in the potato, cream, lowfat milk and clam juice and bring to boil. Simmer, uncovered, till potato is just short of cooked, about 8 min.
  5. The soup can be made ahead up to this point and refrigerated overnight.
  6. Gently reheat if chilled.
  7. Add in the spinach and fresh and smoked oysters and cook just till fresh oysters are cooked, about 1 minute.
  8. Add in additional clam juice if needed for consistency.
  9. Season with salt and white pepper to taste. Serve immediately.
