- If using fresh spinach, trim, rinse, shred and cook in a covered saucepan with the minimum of water for 1-3 min, till tender.
- Cook frzn spinach according to the packet instructions.
- Tip the spinach into a colander and drain thoroughly, pressing the green with the back of a spoon to get rid of the excess moisture.
- Put the spinach, spring onions, butter, salt and mustard in a food processor or possibly blender and puree till smooth.
- Return to a saucepan and heat through, stirring.
- Serve warm.
