Palak Bharta (Merchants Spinach Puree)

Ingredientes

  • 750 gm Fresh spinach or possibly 250g, (8oz) frzn minced spinach (1 1/2lb)
  • 2 x Spring onions, minced coarsely
  • 15 gm Butter, ( 1/2oz)
  • 1/2 tsp Salt
  • 1 Tbsp. Dijon mustard

Direcciones

  1. If using fresh spinach, trim, rinse, shred and cook in a covered saucepan with the minimum of water for 1-3 min, till tender.
  2. Cook frzn spinach according to the packet instructions.
  3. Tip the spinach into a colander and drain thoroughly, pressing the green with the back of a spoon to get rid of the excess moisture.
  4. Put the spinach, spring onions, butter, salt and mustard in a food processor or possibly blender and puree till smooth.
  5. Return to a saucepan and heat through, stirring.
  6. Serve warm.
