- Cut the squash into thick slices this keeps it moist when frying.
- In a shallow frying pan heat the extra virgin olive oil and butter add in the garlic and chilli and fry till their fragrance rises.
- Add in the squash and cook till golden brown adjusting the heat so which the oil does not burn.
- Drain on kitchen paper and season with black pepper.
- Sprinkle with Parmesan and eat with bread and beer.
