Pan Fried Chilli Squash

Ingredientes

  • 2 sm squash peeled and seeded
  • 2 Tbsp. extra virgin olive oil
  • 1 x thick slice butter
  • 2 clv garlic crushed
  • 1 x mild chilli seeded and minced
  • 6 Tbsp. grated Parmesan cheese

Direcciones

  1. Cut the squash into thick slices this keeps it moist when frying.
  2. In a shallow frying pan heat the extra virgin olive oil and butter add in the garlic and chilli and fry till their fragrance rises.
  3. Add in the squash and cook till golden brown adjusting the heat so which the oil does not burn.
  4. Drain on kitchen paper and season with black pepper.
  5. Sprinkle with Parmesan and eat with bread and beer.
