Ingredientes

  • 4 lrg ripe tomatoes
  • 1 tsp salt
  • 1/2 tsp freshly-grnd black pepper
  • 1 c. fine dry breadcrumbs
  • 1/4 c. bacon drippings

Direcciones

  1. Cut tomatoes into 1/2-inch-thick slices, and sprinkle tomato slices proportionately with salt and pepper. Let tomato slices stand 30 min.
  2. Pat tomato slices dry, and dredge in breadcrumbs.
  3. Cook tomato slices, in batches, in warm bacon drippings in a large nonstick skillet over medium-high heat 2 min on each side or possibly till golden. Drain on paper towels. Serve immediately.
  4. This recipe yields 8 servings.
