Ingredientes

  • 6 ounce Sweet potatoes per person
  • 2 tsp Extra virgin olive oil
  • 1/2 lt Water, (for blanching sweet potatoes)
  • 3 tsp Acacia honey
  • 1 tsp Clementine zest

Direcciones

  1. Peel the sweet potatoes and cut into large dice. Drop into boiling water and allow to cook till still hard. Remove from the water and refresh.
  2. Place the sweet potato on a baking tray with honey drizzled on top. Allow to roast in a moderate to high oven (275C) till brown. Serve with a sprinkling of clementine zest.
