Ingredientes
- 6 ounce Sweet potatoes per person
- 2 tsp Extra virgin olive oil
- 1/2 lt Water, (for blanching sweet potatoes)
- 3 tsp Acacia honey
- 1 tsp Clementine zest
Direcciones
- Peel the sweet potatoes and cut into large dice. Drop into boiling water and allow to cook till still hard. Remove from the water and refresh.
- Place the sweet potato on a baking tray with honey drizzled on top. Allow to roast in a moderate to high oven (275C) till brown. Serve with a sprinkling of clementine zest.
