Receta Pan Roasted Halibut With Spring Vegetables

- Season halibut with salt and pepper. In a saute/fry pan, heat oil. Add in fish, flesh-side down, and saute/fry for 4 min. Turn fish and saute/fry, skin-side down, for 4 min. Add in blanched asparagus tips and fava beans to fish, and cook for 2 min. Add in wine and reduce for 1 minute. Stir in butter and tarragon and serve.
