Receta Pan Roasted Halibut With Spring Vegetables

Ingredientes
- 1Â 1/2 lb Halibut fillet - (3/4" thk) cut into 4 pcs
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- 2 Tbsp. Extra virgin olive oil
- 1 c. Blanched pencil asparagus tips
- 1/2 c. Blanched, shelled fresh fava beans
- 1/4 c. White wine
- 1 Tbsp. Butter
- 3 Tbsp. Minced tarragon leaves
Direcciones
- Season halibut with salt and pepper. In a saute/fry pan, heat oil. Add in fish, flesh-side down, and saute/fry for 4 min. Turn fish and saute/fry, skin-side down, for 4 min. Add in blanched asparagus tips and fava beans to fish, and cook for 2 min. Add in wine and reduce for 1 minute. Stir in butter and tarragon and serve.
