%20who've%20influenced%20my%20love%20for%20good%20food-my%20grandmother%20and%20Nigella%20Lawson!%3C/p%3E%3Cp%3EPancakes%20must%20rank%20among%20the%20most%20popular%20breakfast%20options%20in%20many%20countries%20and%20one%20of%20the%20fastest%20breakfast%20dishes%20you%20can%20rustle%20up%20(perfect%20for%20singletons!).%20Apparently,%20it%20was%20even%20eaten%20in%20prehistoric%20societies%20in%20a%20rudimentary%20form.%20They%20are%20also%20called%20flapjacks%20in%20the%20US,%20pikelets%20in%20Australia%20(a%20smaller%20version),%20and%20crepes%20in%20France%20(a%20thinner,%20lacy%20version).%3C/p%3E%3Cp%3EIn%20my%20native%20town%20of%20Mahe,%20which%20was%20once%20a%20French%20colony%20in%20India%20itself,%20I%20remember%20my%20grandmother%20used%20to%20make%20something%20called%20%22ottayappam%22%20(called%20so%20because%20of%20the%20holes-%22otta%22%20in%20Malayalam-on%20its%20surface).%20This%20was%20an%20evening%20snack,%20served%20with%20coconut%20milk%20and%20sugar%20(recipe%20given%20below).%20She%20had%20a%20special%20clay%20pot%20for%20making%20this,%20which%20had%20a%20concave%20shape%20and%20an%20identically-shaped%20lid.%20When%20I%20started%20making%20pancakes,%20I%20correlated%20it%20with%20the%20%22ottayappam%22,%20as%20I%20remembered%20my%20grandmother%20saying%20it%20was%20French%20in%20origin%20and%20had%20almost%20the%20same%20ingredients%20as%20the%20pancake,%20with%20the%20exception%20of%20the%20addition%20of%20coconut%20milk,%20which%20I%20figured%20must%20have%20been%20a%20local%20adaptation%20made%20to%20an%20essentially%20French%20recipe.%3C/p%3E%3Cp%3EI%20love%20having%20pancakes%20for%20breakfast,%20with%20a%20good%20dollop%20of%20butter%20and%20an%20equally%20generous%20serving%20of%20maple%20syrup.%20My%20son%20also%20enjoys%20this,%20but%20I%20make%20sure%20to%20add%20some%20grated%20apples%20in%20his%20pancakes%20and%20substitute%20half%20the%20quantity%20of%20all%20purpose%20flour%20with%20wheat%20flour%20instead.%3C/p%3E%3Cp%3EIn%20this%20day%20and%20age%20of%20ready-to-make%20pancake%20mixes,%20I'm%20sure%20many%20of%20you%20will%20be%20wondering%20why%20on%20earth%20would%20anyone%20want%20to%20make%20a%20pancake%20from%20scratch?!%20That%20was%20what%20I%20thought%20too%20until%20I%20used%20a%20recipe%20of%20Nigella%20Lawson's%20to%20make%20a%20home-made%20pancake%20mix---and%20have%20never%20looked%20back!%20I%20admit%20ready-to-make%20pancake%20mixes%20have%20their%20advantages,%20if%20you're%20feeling%20especially%20lazy%20or%20have%20some%20unexpected%20guests%20drop%20in%20for%20breakfast,%20etc.%20I%20used%20to%20use%20Betty%20Crocker's%20mix,%20which%20is%20great,%20but%20after%20watching%20the%20lovely%20Nigella%20drool%20her%20way%20through%20her%20own%20home-made%20pancake%20mix,%20I%20thought%20if%20the%20one%20and%20only%20Nigella%20(my%20domestic%20Goddess%20extraordinaire!),%20rustles%20up%20her%20own%20mix%20at%20home,%20why%20should%20I%20buy%20mine%20from%20a%20store?%20So%20I'm%20giving%20you%20the%20recipe%20for%20that,%20which%20makes%20about%20half%20a%20kilo%20of%20pancake%20mix.%20Just%20take%20out%20the%20appropriate%20measures%20(in%20cups)%20of%20the%20mix%20each%20time%20you%20want%20to%20make%20the%20pancakes.%3C/p%3E%3Cp%3EJust%20sieve%20all%20this%20together,%20mix%20well%20with%20a%20spoon,%20and%20store%20in%20an%20airtight%20jar.%3C/p%3E%3Cp%3ETo%20make%20the%20pancakes%20(roughly%204%20to%206):%3C/p%3E%3Cp%3ETake%20out%201%20cup%20of%20this%20mix%20in%20a%20mixing%20bowl,%20make%20a%20well%20in%20the%20center,%20and%20stir%20in%201%20cup%20milk,%201%20beaten%20egg,%20and%201%20teaspoon%20melted%20butter.%20Stir%20well%20to%20make%20sure%20there%20are%20no%20lumps.%3C/p%3E%3Cp%3EHeat%20a%20nonstick%20griddle%20or%20tava%20and%20pour%20one%20spoon%20(about%201/4%20cup)%20of%20the%20batter%20on%20it.%20You%20can%20either%20spread%20it%20out%20if%20you%20want%20it%20thin%20or%20just%20leave%20it%20as%20it%20is%20to%20be%20thick.%3C/p%3E%3Cp%3EWhen%20bubbles%20arise%20on%20one%20side,%20flip%20it%20over%20and%20cook%20till%20that%20side%20too%20is%20done.%20It%20will%20be%20brown%20and%20dry.%20This%20will%20take%20about%201%20minute%20on%20either%20side%20and%20is%20best%20done%20on%20a%20low%20flame.%3C/p%3E%3Cp%3EServe%20with%20honey/golden%20syrup/maple%20syrup,%20fresh%20fruit%20like%20bananas%20or%20strawberries,%20or%20a%20fruit%20crush%20(you%20can%20make%20a%20fruit%20crush%20with%20some%20strawberries%20or%20similar%20fruit,%20sprinkled%20with%20sugar,%20and%20cooked%20on%20a%20low%20flame%20until%20the%20water%20oozes%20out.%20Spread%20this%20on%20the%20pancakes%20and%20serve)%3C/p%3E%3Cp%3ERecipe%20%232:%20Ottayappam%3C/p%3E%3Cp%3EMakes%204%20to%206%20appams%20(rough%20estimate!)%3C/p%3E%3Cp%3E2%20cups%20all%20purpose%20flour%20(maida)%3C/p%3E%3Cp%3E1%20egg%3C/p%3E%3Cp%3EHalf%20to%20one%20cup%20coconut%20milk%20(the%20second%20extract-if%20you%20are%20using%20freshly%20extracted%20coconut%20milk.%20If%20using%20coconut%20milk%
