Paneer and Mix-Vege Curry

I have been a vegetarian for this last two weeks and wanted to cook something healthy and wholesome. I wanted it to be a simple one-pot vegetable curry and is surprisingly easy and quick to make.

Ingredientes

  • 1 tsp cumin seeds
  • 1 onion - chopped
  • 1 tomato - chopped
  • 2 inch ginger - finely chopped
  • 1/2 green capsicum - sliced long and thick
  • 1 cup frozen mix vegetables - thawed
  • 1 cup cubed paneer - thawed
  • 2 tsp chili powder
  • 1/2 tsp turmeric powder
  • 2 tsp garam masala
  • Salt and sugar to taste
  • Milk (optional)
  • Coriander leaves

Direcciones

  1. Heat oil and fry the cumin seeds and ginger until light brown. Then add the onion and fry until translucent.
  2. Add in the tomatoes, some coriander leaves and stir for a minute. Now slightly fry the capsicum followed by the spices. Make sure the raw smell is gone then add some water for gravy.
  3. Add salt and sugar to taste and give it a mix before adding the vegetables and paneer.
  4. Once the vegetables and paneer is cooked, add some milk to give it a thick gravy consistency.
  5. Garnish with the remaining coriander leaves and serve hot with rice and pickle or chapatis.
