.%20%20%20In%20my%20defense,%20it%E2%80%99s%20the%20cooking%20part%20that%20I%20love%20best.%20%20To%20me,%20nothing%20is%20better%20than%20getting%20ready%20for%20a%20big%20meal.%20%20I%20love%20planning%20what%20I%E2%80%99m%20going%20to%20make%20and%20then%20working%20to%20make%20sure%20that%20each%20aspect%20is%20perfect.%20%20From%20the%20obsessively%20rolled%20sushi%20upon%20everyone%E2%80%99s%20arrival%20to%20the%20painstakingly%20baked%20tuile%20bowls%20that%20will%20cradle%20a%20scoop%20of%20homemade%20ice%20cream%20for%20dessert,%20I%20want%20to%20make%20sure%20that%20everything%20is%20exceptional.%20Unfortunately%20this%20slightly%20delusional%20behavior%20means%20that%20when%20the%20doorbell%20announces%20the%20arrival%20of%20my%20first%20guests,%20I%20often%20find%20myself%20stifling%20a%20yawn%20as%20I%20battle%20the%20urge%20to%20crawl%20in%20bed%20with%20a%20good%20book.%3C/p%3E%3Cp%3EBut%20I%E2%80%99m%20vowing%20to%20change%20and%20I%E2%80%99m%20starting%20with%20dessert.%20%20Delicate%20panna%20cotta%20(%E2%80%9Ccooked%20cream%E2%80%9D%20in%20Italian)%20is%20the%20over-achieving%20yet%20very%20busy%20cook%E2%80%99s%20answer%20to%20dessert.%20%20And%20it%20should%20be%20everyone%20else%E2%80%99s%20answer%20as%20well!%20%20Ridiculously%20easy%20to%20prepare,%20this%20chilled%20dessert%20will%20impress%20even%20the%20most%20discerning%20guests.%20%20In%20short,%20this%20silky,%20egg-less%20custard%20%20makes%20a%20refreshing%20and%20elegant%20finale%20to%20any%20summer%20meal.%3C/p%3E%3Cp%3ERequiring%20just%20a%20few%20ingredients,%20panna%20cotta%20comes%20together%20quickly.%20%20The%20trickiest%20part%20involves%20the%20gelatin.%20%20Unflavored%20gelatin%20is%20sold%20in%20little%20packages%20and%20comes%20in%20powdered%20form.%20%20It%20needs%20to%20bloom%20before%20being%20used%20and%20this%20happens%20by%20sprinkling%20the%20powdered%20gelatin%20over%20some%20water.%20%20In%20minutes,%20you%E2%80%99ll%20see%20the%20water%20and%20gelatin%20start%20to%20gel.%20%20While%20this%20is%20happening,%20in%20a%20small%20saucepan%20heat%20the%20sugar,%20heavy%20cream%20and%20milk%20over%20medium%20heat,%20stirring%20often,%20until%20bubbles%20form%20around%20the%20edges.%20%20The%20gelatin%20can%20be%20stirred%20into%20the%20cream%20at%20this%20point,%20but%20I%20like%20to%20place%20the%20gelatin%20mixture%20in%20a%20skillet%20of%20simmering%20water%20(see%20picture%20above)%20to%20melt%20the%20gelatin%20back%20into%20a%20liquid.%20%20This%20prevents%20any%20lumps%20from%20forming%20in%20my%20panna%20cotta%20as%20it%20insures%20that%20the%20gelatin%20is%20in%20liquid%20form%20before%20mixing%20it%20back%20in.%20%20While%20you%20can%20most%20certainly%20pour%20the%20panna%20cotta%20mixture%20into%20serving%20bowls%20and%20then%20chill%20them%20at%20this%20time,%20I%20like%20to%20set%20the%20pot%20in%20an%20ice%20water%20bath%20and%20whisk%20it%20slowly%20until%20the%20temperature%20drops.%3C/p%3E%3Cp%3EBy%20doing%20this,%20I%20can%20tell%20that%20the%20gelatin%20has%20activated%20properly%20as%20the%20cream%20will%20begin%20to%20thicken%20ever%20so%20slightly%20as%20the%20temperature%20lowers.%20%20For%20me,%20it%E2%80%99s%20a%20nice%20little%20reassurance%20for%204%20hours%20later%20when%20my%20guests%20are%20anxiously%20waiting%20for%20dessert%20that%20the%20panna%20cottas%20will%20come%20out%20perfectly%20set.%3C/p%3E%3Cp%3EGarnish%20the%20panna%20cottas%20with%20some%20fresh%20berries%20soaked%20in%20a%20little%20sugar%20and%20Moscato%20d%E2%80%99%20Asti%20and%20then%20present%20them%20to%20your%20guests.%20%20I%20promise%20they%E2%80%99ll%20be%20awed%20and%20you%E2%80%99ll%20be%20awake%20enough%20to%20appreciate%20it.%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EPrepare%20an%20ice%20water%20bath%20in%20a%20large%20bowl.%3C/p%3E%3Cp%3EPour%20the%20water%20into%20a%20small%20bowl%20or%20ramekin.%20%20Sprinkle%20the%20gelatin%20over%20the%20top%20of%20the%20water%20and%20allow%20it%20to%20set%20for%20about%205%20minutes.%20%20%20Bring%20a%20small%20skillet%20of%20water%20to%20a%20simmer.%3C/p%3E%3Cp%3EIn%20a%20small%20saucepan,%20heat%20the%20heavy%20cream,%20whole%20milk,%20and%20%C2%BC%20cup%20sugar%20over%20medium%20heat%20until%20the%20sugar%20dissolves%20and%20small%20bubbles%20form%20around%20the%20edge%20of%20the%20pan.%20%20Remove%20the%20pan%20from%20the%20heat.%3C/p%3E%3Cp%3EPlace%20the%20small%20bowl%20of%20gelatin%20into%20the%20simmering%20water.%20%20Stir%20until%20the%20gelatin%20has%20completely%20dissolved%20and%20become%20a%20liquid%20again.%20%20Carefully%20remove%20the%20small%20bowl%20from%20the%20pan%20and%20whisk%20the%20gelatin%20into%20the%20hot%20heavy%20cream.%20%20Stir%20in%20the%20vanilla%20extract.%20%20Place%20the%20saucepan%20into%20the%20ice%20water%20bath%20and%20stir%20until%20the%20mixture%20has%20cooled%20and%20just%20starts%20to%20thicken.%3C/p%3E%3Cp%3EDivide%20the%20mixture%20between%20four%20serving%20bowls.%20%20Cover%20the%20serving%20bowls%20with%20plastic%20w
