Receta Pansit Canton (Filipino)
I was recently introduced to Filipino cooking. It is a fusion of Chinese, European, American, Arab and Asian cuisines, rich in flavor and color. Adobo Chicken is probably the most well known and another favorite is Pansit Bihon. I haven't seen Pansit Canton on CES, so here it is. It may have quite a few ingredients, but it's not complicated to create. Pansit (noodles) are commonly served at birthday celebrations and represent long life and good health; they must not be cut short so as not to corrupt the symbolism.

- In a big pan or wok, sauté in oil the garlic and onions
- Add sliced pork until cooked
- Add 2 cups of chicken broth
- Add the shredded chicken, sliced Chinese sausages, shrimps, snow peas, cabbage, celery and diced carrot.
- Simmer for about 10 minutes or until cooked
- Add the remaining 2 cups of chicken broth and the pansit canton noodles
- Let simmer until noodles are soft.
- Add the scallions, sesame oil then salt and pepper to taste.
- Serve hot
