Pansit Canton (Filipino)

I was recently introduced to Filipino cooking. It is a fusion of Chinese, European, American, Arab and Asian cuisines, rich in flavor and color. Adobo Chicken is probably the most well known and another favorite is Pansit Bihon. I haven't seen Pansit Canton on CES, so here it is. It may have quite a few ingredients, but it's not complicated to create. Pansit (noodles) are commonly served at birthday celebrations and represent long life and good health; they must not be cut short so as not to corrupt the symbolism.

Ingredientes

  • 12 ounces pansit Canton noodles (flour noodles or flour sticks)
  • 1 chicken breast, cooked and shredded
  • 4 cups chicken broth
  • 1/2 pound pork, sliced in small pieces
  • 1/2 pound shrimps, shelled and deveined
  • 4 tablespoons cooking oil
  • 1/2 cup chopped onion
  • 2 tablespoons garlic, minced
  • 1/2 cup Chinese sausages, sliced
  • 1/2 head cauliflower, cut to bit size
  • 2 cups snow peas
  • 2 cups cabbage, sliced into strips
  • 1 cup celery, sliced
  • 1 carrot, diced
  • 1/4 cup scallions, diced
  • 4 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Direcciones

  1. In a big pan or wok, sauté in oil the garlic and onions
  2. Add sliced pork until cooked
  3. Add 2 cups of chicken broth
  4. Add the shredded chicken, sliced Chinese sausages, shrimps, snow peas, cabbage, celery and diced carrot.
  5. Simmer for about 10 minutes or until cooked
  6. Add the remaining 2 cups of chicken broth and the pansit canton noodles
  7. Let simmer until noodles are soft.
  8. Add the scallions, sesame oil then salt and pepper to taste.
  9. Serve hot
