Ingredientes

  • 3 lb Pig's feet cut 2" pcs
  • 8 c. Chicken stock
  • 2 x Onions quartered
  • 2 x Celery stalks cut 2" long pcs
  • 1 Tbsp. Minced garlic
  • 8 x Star anise
  • 3/4 c. Raw peanuts
  • 1 c. Sliced shiitake mushrooms
  • 1 c. Minced mustard cabbage
  • 1 1/2 tsp Peeled, chopped fresh ginger
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Direcciones

  1. In a large sauce pan, combine the pig's feet, chicken stock, onions, celery, garlic, and star anise. Season with salt and pepper. Bring the liquid up to a boil. Reduce to a simmer, covered and cook for 1 1/2 hrs, skimming the surface occasionally. Add in the peanuts, cover and simmer for 30 min. Remove the star anise from the soup. Stir in the mushrooms, cabbage, and ginger. Simmer for 5 min. Ladle the soup into a bowl and serve.
