These Parmesan Roasted Asparagus have to be the quickest and simplest dish that I’ve ever tried and they turn out tender and crisp just the way I think it should be!

By now I am sure you are all seeing way to much green.

I am not Irish, but everyone is Irish for the day. St Paddy’s day is, well “who cares what the day is all about” anyway. It give people a reason to celebrate. Or a reason to pinch someone that’s not wearing green. If you don’t have anything green to wear, eat something green. I don’t really need a reason to eat asparagus. It’s one of my favorite veggies out there.

Luckily these green veggies will put a smile on your face. The umami from the Parmesan pairs perfectly with the asparagus. I don’t think I will ever want to eat them any other way.

Prep time: 5 mins Cook time: 20 mins Total time: 25 mins

2½ pounds fresh asparagus (about 30 large) 2 tablespoons olive oil ½ teaspoon kosher salt ¼ teaspoon freshly ground black pepper ½ cup freshly grated Parmesan cheese

Preheat the oven to 400 degrees. If the stalks of the asparagus are thick, peel the bottom half of each. Lay them in a single layer on a sheet pan and drizzle with olive oil. Sprinkle with salt and pepper. Roast for 15 to 20 minutes, until tender. Sprinkle with the Parmesan and return to the oven for another minute 3.2.2925
