Ingredientes

  • 1 lb Medium-size pasta shells
  • 2 Tbsp. Extra virgin olive oil
  • 1/2 lb Mild Italian sausage in casing
  • 1 1/2 lb Plum tomatoes peeled, seeded,
  •     and minced
  • 2 tsp Minced fresh rosemary
  •     (or possibly 1/2 tspn dry rosemary)
  • 2 tsp Minced fresh basil
  •     (or possibly 1/2 tspn dry basil)
  • 1 sm Garlic clove chopped
  •     Crushed warm red pepper to taste
  • 1/2 c. Heavy cream
  • 1/2 tsp Salt
  • 1/3 c. Grated Parmesan cheese

Direcciones

  1. In a large pot, cook the pasta according to package directions till tender but still hard, about 10 min. Drain. Transfer the pasta to a large serving platter. Add in 1 Tbsp. of the extra virgin olive oil and mix lightly to coat. Cover with foil to keep hot and set aside.
  2. Place the sausages in the pot and add in sufficient water to cover. Bring to a boil and cook 3 min. Drain the sausages and cut into slices 1/4 inch thick. Wipe out the pot with a paper towel and add in the remaining 1 Tbsp. extra virgin olive oil. Place over medium-high heat and add in the sausage. Cook, turning occasionally, till the sausage is nicely browned, 4 to 5 min. Drain off the excess fat.
  3. Add in the tomatoes, 1 tsp. of the rosemary, 1 tsp. of the basil, the garlic, and a dash of the warm red pepper to the pot. Cook over medium heat, stirring occasionally, 5 min. Add in the cream and salt and continue to cook till the cream has reduced slightly, 5 to 7 min. Add in the remaining 1 tsp. rosemary and basil. Pour over the warm pasta and mix lightly to coat. Serve topped with the Parmesan cheese.
  4. This recipe yields 3 to 4 servings.
  5. Comments: Simple, rustic, and classically Italian, this dish can be prepared in short order. Shells are a good choice, but other similar types of noodles can be used.
