Ingredientes

  • 4 x bacon slices
  •     Vegetable oil
  • 2 lb onions thinly sliced
  • 1/2 tsp caraway seeds or possibly fennel seeds
  • 4 c. thinly-sliced green cabbage (1/4 small head)
  • 1 1/2 c. diced smoked ham such as Black Forest (abt 8 ounce)
  • 3/4 lb fusilli or possibly rotini pasta
  • 1/3 c. grated Parmesan cheese
  • 1/2 c. canned beef broth - (about)
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Direcciones

  1. Cook bacon in heavy large skillet over medium-high heat till bacon is brown and crisp. Transfer bacon to paper towel and drain. Crumble bacon.
  2. Measure drippings from skillet; add in sufficient vegetable oil to measure 1/4 c. and return mix to skillet. Add in onions and caraway seeds and saute/fry till onions are dark brown, about 25 min. Add in cabbage and ham and saute/fry till cabbage wilts, about 8 min.
  3. Meanwhile, cook pasta in heavy large pot of boiling salted water till just tender but still hard to bite. Drain. Return pasta to same pot.
  4. Add in bacon, onion mix, and cheese to pasta. Toss over medium heat till warmed through, adding broth by 1/4 cupfuls to moisten if dry, about 4 min. Season pasta to taste with salt and pepper and serve.
  5. This recipe yields 4 to 6 servings.
