%20I%20had%20two%20age%20groups%20to%20prepare%20for,%20so%20it%20takes%20a%20bit%20of%20extra%20time%20adapting%20it%20both%20for%20older%20and%20younger%20children.%20You%20want%20them%20all%20to%20have%20fun.%3C/p%3E%3Cp%3EIt%20was%20getting%20rather%20close%20to%20tea%20time%20and%20I%20still%20needed%20to%20prepare%20us%20something%20to%20eat.%3C/p%3E%3Cp%3EIn%20the%20old%20days%20that%20would%20not%20have%20been%20much%20of%20a%20problem%20as%20I%20had%20a%20family%20that%20readily%20ate%20pasta%20in%20any%20way%20shape%20or%20form,%20and%20.%20.%20.%20as%20we%20all%20know%20.%20.%20.%20pasta%20with%20some%20sort%20of%20sauce%20is%20a%20quick,%20tasty,%20easy%20and%20economical%20way%20to%20go!%3C/p%3E%3Cp%3EI%20have%20a%20husband%20who%20hates%20pasta%20now%20though%20.%20.%20.%20it's%20foreign%20food,%20and%20he%20is%20a%20man%20with%20very%20solid,%20old%20fashioned%20British%20tastes%20.%20.%20.%20read%20meat%20and%20potatoes%20here.%3C/p%3E%3Cp%3EOccasionally%20I%20do%20try%20to%20whiz%20it%20past%20him%20.%20.%20.%20he%20only%20very%20rarely%20enjoys%20it,%20but%20.%20.%20.%20sometimes%20I%20do%20get%20lucky.%3C/p%3E%3Cp%3EToday%20was%20not%20one%20of%20those%20times.%20I%20ended%20up%20opening%20him%20a%20tin%20of%20soup%20after%20I%20watched%20him%20suffering%20through%20it%20for%20about%2015%20minutes%20.%20.%20.%20trying%20to%20pick%20the%20vegetables%20and%20chicken%20out%20from%20between%20the%20pasta%20bits%20.%20.%20.%20sigh%20.%20.%20.%3C/p%3E%3Cp%3EI,%20on%20the%20other%20hand,%20enjoyed%20every%20scrummy%20mouthful,%20and%20.%20.%20.%20I%20think%20all%20you%20pasta%20lovers%20out%20there%20will%20too.%3C/p%3E%3Cp%3ESo%20there!%20(Crusty%20bread%20to%20mop%20up%20all%20that%20delicious%20sauce%20is%20a%20given!!)%3C/p%3E%3Cp%3E*Pasta%20with%20Chicken,%20Pancetta%20and%20Summer%20Vegetables*%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EThis%20is%20one%20of%20those%20quick%20and%20easy%20dishes%20where%20you%20can%20throw%20in%20just%20whatever%20vegetables%20you%20have%20to%20hand.%20I%20had%20courgettes,%20beans,%20leeks%20and%20tomatoes.%20You%20may%20have%20something%20else.%20Chard%20is%20very%20nice,%20as%20is%20asparagus%20and%20peas.%3C/p%3E%3Cp%3ECook%20the%20pasta%20according%20to%20the%20package%20directions.%20Drain%20well,%20(reserve%20a%20mugfull%20of%20the%20pasta%20cooking%20water)%20rinse,%20drain%20again%20and%20then%20set%20aside.%3C/p%3E%3Cp%3EHeat%20a%20large%20skillet%20over%20medium%20heat.%20Add%20the%20pancetta%20and%20cook,%20stirring%20occasionally%20until%20most%20of%20the%20fat%20has%20been%20rendered%20and%20the%20pancetta%20has%20started%20to%20brown.%20Toss%20in%20the%20chicken%20and%20leeks.%20Continue%20to%20cook,%20stirring,%20until%20the%20chicken%20is%20cooked%20through%20and%20the%20leeks%20have%20softened.%20Add%20the%20beans%20and%20courgettes.%20Cook%20and%20stir%20for%20several%20minutes.%20Add%20the%20tomatoes%20and%20the%20wine,%20allowing%20it%20to%20bubble%20up.%20Allow%20to%20bubble%20until%20the%20wine%20reduces%20by%20half.%20Stir%20in%20the%20cream%20and%20the%20cheese.%20Cook%20and%20stir%20to%20melt.%20Season%20to%20taste%20with%20some%20salt%20and%20pepper%20and%20stir%20in%20the%20basil%20leaves.%20Serve%20immediately%20with%20some%20Parmesan%20Shavings%20scattered%20over%20top.%20Delicious!%3C/p%3E){kind=link}
