Ingredientes

  • 1/3 cup olive oil, preferably extra virgin
  • 1/2 cup garlic, minced
  • 3 lbs fresh mushrooms, sliced'
  • 4 Tbsp basil
  • 2 Tbsp oregano
  • 2 Tbsp crushed red pepper
  • 8 lbs clams, salt-free, frozen in own juice
  • 10 lbs canned tomatoes, crushed
  • 2 Tbsp Mrs. Dash seasoning
  • 1 cup parsley, chopped
  • 3/4 cups tomato paste
  • 3 Tbsp salt-reduced soy sauce
  • 4 lbs spaghetti
  • 2 cups grated parmesan cheese

Direcciones

  1. In a large, heavy pot, heat oil. Add garlic, mushrooms, basil, oregano, and pepper, and cook over low-medium heat until mushrooms lose their moisture.
  2. Add clam juice, tomatoes, and Mrs. Dash.
  3. Bring to a boil, then lower heat and simmer uncovered for 25 minutes.
  4. Add clams, parsley, tomato paste and soy sauce. Cook 5-10 minutes more. Taste and adjust seasoning if necessary.
  5. Cook spaghetti and drain.
  6. Serve 3/4 cup pasta with 1/2 cup sauce. Sprinkle each serving with 2 teaspoons grated parmesan.
