Receta Pasta with Clam Sauce/50

Ingredientes
- 1/3 cup olive oil, preferably extra virgin
- 1/2 cup garlic, minced
- 3 lbs fresh mushrooms, sliced'
- 4 Tbsp basil
- 2 Tbsp oregano
- 2 Tbsp crushed red pepper
- 8 lbs clams, salt-free, frozen in own juice
- 10 lbs canned tomatoes, crushed
- 2 Tbsp Mrs. Dash seasoning
- 1 cup parsley, chopped
- 3/4 cups tomato paste
- 3 Tbsp salt-reduced soy sauce
- 4 lbs spaghetti
- 2 cups grated parmesan cheese
Direcciones
- In a large, heavy pot, heat oil. Add garlic, mushrooms, basil, oregano, and pepper, and cook over low-medium heat until mushrooms lose their moisture.
- Add clam juice, tomatoes, and Mrs. Dash.
- Bring to a boil, then lower heat and simmer uncovered for 25 minutes.
- Add clams, parsley, tomato paste and soy sauce. Cook 5-10 minutes more. Taste and adjust seasoning if necessary.
- Cook spaghetti and drain.
- Serve 3/4 cup pasta with 1/2 cup sauce. Sprinkle each serving with 2 teaspoons grated parmesan.
