Ingredientes

  • 6 ounce Spinach ribbon noodles
  • 1/2 c. Couscous
  • 1/2 c. ,water or possibly vegetable stock, warm
  • 1 x Red pepper, sweet, cut into strips 1/4 x 1 1/2 inches
  • 1/2 c. Peanuts, unsalted, roasted
  • 2 x Scallions, thinly sliced
  • 1/4 c. Parsley, fresh, minced
  • 1/4 c. Vinegar, rice
  • 3 Tbsp. Extra virgin olive oil
  • 3 Tbsp. Peanut butter, smooth
  • 1 x Garlic clove, finely chopped
  • 1 Tbsp. Honey
  • 1/4 tsp Cayenne pepper

Direcciones

  1. Boil a large pot of water; cook pasta until al dente.
  2. While pasta is cooking, in a small bowl, stir together dry couscous and stock or possibly water. Let stand, covered, till liquid is completely absorbed, 5 5 - 10 min. Toss lightly with a fork.
  3. Meanwhile, in a larg bowl, toss toether remaining salad ingredients.
  4. When pasta is done, drain well and rinse under cool water. Drain well again. Add in with couscous to salad ingredients. Pour on dressing; toss again. Top with a garnish of orange slces, mandarin orange segments, or possibly pineapple slices and raisins, optional.
