Ingredientes

  • 1/2 lrg pineapple peeled, cored,
  •     and minced
  •     (or possibly 2 [15-ounce] cans pineapple chunks, liquid removed)
  • 1 lrg red pepper minced
  • 1 lrg red onion minced
  • 1 x jalapeno pepper chopped
  • 1/2 c. fresh orange juice
  • 1/3 c. lime juice
  • 1 1/2 lb deveined peeled large shrimp
  • 6 c. cooked rotini noodles

Direcciones

  1. In a large bowl, combine all ingredients for the salsa. Set aside.
  2. Prepare an outdoor grill with an oiled rack set 6 inches from the coals. On a gas grill, place the setting to high. Grill the shrimp for 2 min per side.
  3. Toss the cooked noodles with the salsa. Arrange the shrimp on the pasta and serve.
  4. This recipe yields 6 servings.
  5. Serving size: 3 ounces shrimp, 1 c. pasta.
