Ingredientes

  • 1 sm Red onion, minced fine
  • 1 x Yellow bell pepper, minced fine
  • 3 Tbsp. Extra-virgin extra virgin olive oil
  •     A, (7-oz) jar roasted red peppers, liquid removed and minced fine
  • 3/4 c. Finely minced prosciutto or possibly other ham, (about 3 ounces)
  • 1/2 lb Gigi del gargano, (ruffle-edged, cone-shaped pasta) or possibly rotini (spiral pasta)
  • 1 c. Packed mixed fresh herbs such as basil, mint, and parsley leaves, minced fine
  •     Lemon wedges as an accompaniment
  •     Freshly grated Parmesan cheese as an accompaniment

Direcciones

  1. In a heavy skillet cook onion and yellow pepper in 1 Tbsp. oil over moderately low heat, stirring, till softened and stir in red peppers and ham. In a kettle of salted boiling water cook pasta till al dente and drain well. In a bowl toss pasta with pepper mix, remaining 2 Tbsp. oil, herbs, and salt and pepper to taste.
  2. Serve pasta with lemon and Parmesan.
  3. Serves 2.
