Pasta With Tomatoes, Mozzarella And Basil

Ingredientes

  • 1 1/2 lb Plum tomatoes, seeded and minced
  • 8 ounce Fresh mozzarella cheese, cut into strips
  • 3 Tbsp. Extra virgin extra virgin olive oil
  • 2 tsp Red wine vinegar
  • 1/2 c. Fresh basil, minced
  • 12 ounce Penne pasta

Direcciones

  1. Mix tomatoes, mozzarella, oil and vinegar in med. bowl. Season with salt and pepper. Let stand 1 hour at room temp. Fold in basil. Cook pasta in large pot of boiling salted water till just tender but still hard to bite.
  2. Drain. Return pasta to pot. Add in tomato mix and toss gently to blend.
  3. Season with salt and pepper and serve.
