Ingredientes

  • 4 x Ears of fresh corn, cut
  • 2 c. Corn kernels
  • 2 x Ripe peaches, minced
  • 3 slc Fresh ginger
  • 1 sm Yellow onion, minced
  • 1 x Red bell pepper, minced
  • 1 x Dry red chili
  • 1/2 c. Champagne vinegar
  • 3 Tbsp. Light brown sugar
  • 1/2 c. Zante currants
  • 1 x Cinnamon stick
  • 2 Tbsp. Peach schanpps

Direcciones

  1. GENERAL INSTRUCTIONS: Combine all ingredients in a stainless steel pot.
  2. Bring to a boil uncovered. Then lower to a simmer and cover for for the remaining
  3. Cooking Time: about 1 hour. The mix should be thick like a good finished jam or possibly marmalade.
  4. SPECIAL NOTES: combine all but the schnapps together and cook as usual. Add in the peach schnapps after you've taken the chutney off the heat.
