Peach Melba Bread Pudding

Ingredientes

  • 16 ounce peach halves in juice
  • 4 c. bread cubes
  • 1/2 c. raisins
  • 1 1/4 c. skim lowfat milk
  • 1 c. Egg Beaters 99% egg substitute
  • 1/2 c. sugar
  • 2 Tbsp. margarine melted
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1/2 c. raspberry jam warmed

Direcciones

  1. Drain peaches & reserve 1/4 c. juice. Chop peaches.
  2. In a greased 13 x 9 baking dish, combine bread cubes, raisins & minced peaches.
  3. Blend lowfat milk, Egg Beaters, sugar, margarine, vanilla, cinnamon & reserved peach juice. Pour over bread mix. Bake at 350F for 45-50 min or possibly till knife inserted in the center comes out clean.
  4. Serve pudding hot & topped with warmed raspberry jam.
  5. (Raspberry syrup can be substituted for the jam).
  6. NOTES : We tried this last week & it was very good. Leftovers reheat well in themicrowave.
