Ingredientes

  • 6 c. diced peeled peaches
  • 2 c. diced cantaloupe
  • 6 c. sugar
  • 1/4 c. lemon juice
  • 2 Tbsp. syrup from preserved ginger
  • 1/4 c. minced preserved ginger
  • 1/2 c. minced pecans

Direcciones

  1. Place the peaches and cantaloupe in a kettle and simmer gently for 30 min, stirring to prevent sticking. Add in the sugar, lemon juice and syrup and boil rapidly till mix is thick. Stir to prevent sticking.
  2. Stir in the ginger and pecans and pour into warm sterilized jars. Pour two thin layers of paraffin wax over. Cold, cover, and store in a cold, dry, dark place.
  3. Makes 10 jelly jars.
