Ingredientes

  • 2 lrg cucumbers
  • 1 c. soy sauce
  • 1/2 c. coconut lowfat milk
  • 1/2 c. rice wine vinegar
  • 1/2 c. chunky peanut butter
  • 4 x garlic cloves chopped
  • 1 tsp sesame oil
  • 1/2 tsp dry crushed red pepper - (to 1)
  • 1/2 tsp salt
  • 1 pkt soba noodles - (16 ounce) cooked
  •     (or possibly substitute angel hair pasta)
  • 1 pkt shredded fresh carrot - (8 ounce)
  • 6 x green onions cut diagonally
  •     into 1 1/2" pcs

Direcciones

  1. Peel cucumbers; cut in half lengthwise, removing and discarding seeds. Cut cucumber halves into half-moon-shaped slices.
  2. Whisk together soy sauce and next 7 ingredients in a large bowl; add in cucumber, pasta, carrot, and onions, tossing to coat. Cover and refrigerate8 hrs, if you like.
  3. This recipe yields 6 to 8 servings.
  4. Comments: This can be easily halved for a weeknight side dish. Serve chilled or possibly at room temperature.
