Receta Peanut Noodle Salad

Ingredientes
- 2 lrg cucumbers
- 1 c. soy sauce
- 1/2 c. coconut lowfat milk
- 1/2 c. rice wine vinegar
- 1/2 c. chunky peanut butter
- 4 x garlic cloves chopped
- 1 tsp sesame oil
- 1/2 tsp dry crushed red pepper - (to 1)
- 1/2 tsp salt
- 1 pkt soba noodles - (16 ounce) cooked
- Â Â (or possibly substitute angel hair pasta)
- 1 pkt shredded fresh carrot - (8 ounce)
- 6 x green onions cut diagonally
- Â Â into 1 1/2" pcs
Direcciones
- Peel cucumbers; cut in half lengthwise, removing and discarding seeds. Cut cucumber halves into half-moon-shaped slices.
- Whisk together soy sauce and next 7 ingredients in a large bowl; add in cucumber, pasta, carrot, and onions, tossing to coat. Cover and refrigerate8 hrs, if you like.
- This recipe yields 6 to 8 servings.
- Comments: This can be easily halved for a weeknight side dish. Serve chilled or possibly at room temperature.
