%20so%20I%20did%20the%20next%20best%20thing;%20I%20used%20a%20muffin%20pan.%3C/p%3E%3Cp%3EMy%20tale%20of%20woe%20does%20not%20end%20here.%20%20When%20one%20isn%E2%80%99t%20working,%20one%20watches%20spending%20and%20I%20could%20not%20bring%20myself%20to%20spend%20$6%20on%20hazelnuts%20when%20I%20only%20needed%201/3%20cup%20so%20I%20used%201/4%20cup%20of%20almond%20flour,%20something%20I%20am%20apparently%20hoarding%20in%20my%20freezer.%3C/p%3E%3Cp%3EWhen%20my%20husband%20and%20I%20went%20to%20the%20not%20so%20local%20International%20market%20on%20Sunday,%20I%20stocked%20up%20on%20tiny%20pears.%20%20They%20had%20both%20Fourelle%20and%20Seckel%20pears%20and%20I%20chose%20a%20half-dozen%20of%20each.%20%20What%20can%20I%20say,%20I%20happen%20to%20love%20pears%20and%20was%20thinking%20of%20something%20I%20saw%20on%20Pinterest%20recently%20and%20thought%20I%20would%20give%20it%20a%20try.%20%20First%20I%20poached%20the%20pears.%20%20To%20do%20this,%20I%20placed%20the%20peeled%20pears-stems%20and%20cores%20left%20in%20place,%20into%20a%20saucepan%20with%201/2%20cup%20ruby%20port,%201/2%20cup%20apple%20cider,%202%20cups%20water,%201/2%20cup%20light%20brown%20sugar,%201%20cardamom%20pod,%201%20star%20anise%20pod,%20a%201%E2%80%B3%20piece%20of%20vanilla%20bean,%203%20whole%20allspice%20and%205%20whole%20black%20pepper%20corns.%20%20With%20the%20heat%20at%20medium-low,%20I%20allowed%20the%20pears%20to%20simmer%20gently,%20turning%20them%20occasionally%20so%20they%20would%20color%20evenly%20until%20they%20were%20tender%20when%20a%20knife%20tip%20was%20inserted.%20%20The%20pears%20were%20allowed%20to%20sit%20in%20the%20liquid%20until%20mostly%20cooled%20and%20then%20were%20carefully%20lifted%20out%20and%20placed%20in%20a%20dish%20lined%20with%20a%20paper%20towel%20and%20placed%20in%20the%20fridge%20over%20night.%3C/p%3E%3Cp%3EThe%20recipe%20also%20called%20for%20creme%20fraiche%20and%20since%20I%20had%20some%20heavy%20cream%20and%20cultured%20buttermilk,%20I%20made%20my%20own%20by%20pouring%201%20cup%20of%20cream%20into%20a%20glass%20measuring%20cup,%20then%20I%20stirred%20in%20a%20tablespoon%20of%20buttermilk%20and%20let%20it%20sit%20out%20overnight.%20%20It%20was%20pretty%20thick-I%20may%20have%20added%20a%20bit%20more%20than%20a%20tablespoon%20of%20buttermilk.%3C/p%3E%3Cp%3EHaving%20toasted%20the%20almond%20flour,%20I%20proceeded%20with%20the%20recipe%20but%20doubled%20the%20almond%20extract%20to%20give%20it%20a%20bit%20of%20a%20frangipan%20flavor.%20%20The%20batter%20was%20divided%20between%20the%20pans%20and%20the%20pears%20were%20pressed%20into%20the%20batter.%20%20A%20little%20of%20sprinkle%20of%20Demerara%20sugar%20over%20the%20top%20and%20into%20the%20oven%20they%20went.%3C/p%3E%3Cp%3EThey%20baked%20up%20beautifully;%20the%20pears%20only%20added%20about%205%20extra%20minutes%20of%20baking%20time.%20%20They%20needed%20to%20cool%20in%20the%20pans%20so%20that%20the%20cake%20could%20set%20and%20support%20the%20pears.%20%20However,%20the%20greasing/flouring%20of%20the%20pans%20allowed%20them%20to%20slip%20out%20undamaged.%3C/p%3E%3Cp%3ETo%20get%20an%20idea%20of%20what%20the%20pears%20were%20like,%20the%20front%20left%20is%20a%20Seckel%20pear,%20the%20front%20right%20is%20a%20Fourelle%20pear%20and%20in%20the%20rear%20is%20a%20fully%20ripened%20Comice%20pear.%20%20Can%20you%20see%20the%20difference%20in%20size?%20%20The%20Comice%20pear%20was%20easily%20twice%20the%20size%20of%20the%20others%20but%20all%20were%20ripe%20and%20juicy%20and%20when%20poached,%20they%20held%20their%20shape%20without%20falling%20to%20pieces.%3C/p%3E%3Cp%3EThe%20syrup%20on%20the%20plate%20is%20actually%20the%20poaching%20liquid.%20%20After%20I%20removed%20the%20pears,%20I%20had%20about%202%20cups%20of%20liquid%20and%20using%20the%20same%20sauce%20pan%20over%20medium-low%20heat,%20it%20was%20reduced%20down%20to%20slightly%20less%20than%20a%20cup.%20%20It%20is%20flavorful%20and%20a%20beautiful%20ruby%20color%20and%20I%20am%20thinking%20it%20will%20make%20some%20wonderful%20cocktails%E2%80%A6My%20only%20thought%20on%20this,%20the%20cake%20was%20not%20very%20sweet.%20%20While%20my%20first%20impulse%20is%20to%20add%20more%20sugar%20next%20time,%20I%20think%20in%20this%20case,%20more%20syrup%20and%20possibly%20a%20scoop%20of%20ice%20cream%20would%20do%20the%20trick%20nicely.%3C/p%3E%3Cp%3EUntil%20next%20week,%20bake%20on%20friends.%20%20To%20see%20how%20the%20other%20participants%20made%20out%20with%20this%20recipe,%20check%20the%20website%20and%20consider%20joining%20in%20on%20the%20fun!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
