;%20this%20is%20how%20we%20do%20in%20Michigan.%20I%20don't%20miss%20much%20about%20my%20home%20state%20but%20I%20do%20miss%20that.%3C/p%3E%3Cp%3EMichigan%20is%20becoming%20more%20and%20more%20well%20known%20as%20a%20beer%20state%20with%20micro%20breweries%20are%20popping%20up%20all%20over.%20What%20a%20lot%20people%20don't%20know%20though,%20because%20it%20so%20rarely%20makes%20it%20out%20of%20the%20state,%20is%20that%20Michigan%20is%20also%20full%20of%20wineries%20and%20cideries.%20I%20may%20have%20made%20up%20'cidery'.%20Michigan%20hard%20cider%20is%20as%20coveted%20and%20amazing%20as%20the%20soft%20stuff.%20Throw%20in%20some%20sugared%20doughnut%20holes%20from%20a%20local%20bakery%20and%20life%20is%20bliss.%3C/p%3E%3Cp%3EFeeling%20saucy%20and%20threw%20in%20some%20fried%20cranberriesMixing%20by%20handReady%20for%20the%20oven!%3C/p%3E%3Cp%3EI%20always%20feel%20nostalgic%20in%20fall.%20One%20of%20my%2018%20uncles%20owned%20an%20apple%20and%20pear%20orchard%20and%20he%20would%20drop%20off%20bushels%20of%20them%20every%20once%20in%20a%20while%20during%20the%20season.%20I%20had%20no%20idea%20what%20the%20majority%20of%20produce%20cost%20until%20I%20moved%20to%20DC%20where%20I%20spent%20a%20minimum%20of%20$20%20a%20week%20on%20Honeycrisp%20apples;%20far%20less%20than%20a%20bushel%20of%20them%20to%20boot.%20Because%20we%20always%20had%20such%20a%20surplus,%20crisp%20was%20a%20pretty%20frequent%20dessert%20at%20home.%20It's%20a%20little%20harder%20to%20make%20here%20because%20I%20can't%20find%20oatmeal.%20I%20believe%20Carrefour%20carries%20steel%20cut%20oats;%20but%20they%20are%20not%20the%20same%20and%20of%20course%20the%20price%20is%20highway%20robbery.%20Through%20visiting%20friends%20and%20my%20trip%20home%20in%20August%20I've%20built%20up%20a%20supply,%20albeit%20a%20dwindling%20supply.%3C/p%3E%3Cp%3EMy%20last%20Turkish%20class%20was%20last%20week%20and%20I%20took%20the%20opportunity%20of%20a%20class%20potluck%20to%20make%20a%20couple%20crisps.%20Normally%20what%20I%20would%20actually%20do%20is%20double%20the%20batch%20of%20crisp%20and%20press%20some%20into%20the%20dish%20as%20a%20crust%20as%20well%20as%20put%20it%20on%20top.%20However%20since%20oatmeal%20is%20a%20precious%20commodity%20here%20I%20put%20it%20only%20on%20the%20top.%3C/p%3E%3Cp%3EMmmmm%3C/p%3E%3Cp%3EI%20was%20not%20ready%20to%20stop%20there%20though!%20Crisp%20on%20its%20own%20is%20a%20wonderful%20thing%20but%20I%20wanted%20to%20go%20the%20extra%20mile%20and%20make%20caramel%20to%20pour%20over%20the%20top.%20I%20found%20a%20recipe%20that%20has%20no%20need%20for%20sweet%20&%20condensed%20milk%20or%20Karo%20syrup,%20the%20former%20being%20difficult%20to%20find%20here%20and%20the%20latter%20impossible.%20Sugar,%20butter,%20and%20cream%20-%20ingredient-wise%20it%20couldn't%20be%20easier!%20Making%20it%20was%20a%20slightly%20different%20story%20but%20the%20promise%20of%20luscious%20caramel%20beckoned.%3C/p%3E%3Cp%3EIt's%20not%20hard%20per%20say,%20just%20time%20consuming%20because%20sugar%20takes%20buggering%20forever%20to%20melt.%20And%20who%20makes%20pots%20and%20pans%20with%20metal%20handles?!%20Because%20while%20the%20sugar%20was%20heating%20so%20was%20the%20pot!%20Eventually%20I%20had%20to%20fold%20up%20a%20dish%20towel%20and%20use%20it%20to%20hold%20onto%20the%20pot%20handle%20which%20then%20ran%20the%20danger%20of%20the%20cloth%20catching%20on%20fire%20from%20the%20gas%20flame...%3C/p%3E%3Cp%3EOh%20it%20was%20beautiful.%20Baking%20is%20therapy%20for%20me%20and%20making%20two%20crisps%20(one%20for%20class%20one%20for%20me!)%20and%20making%20the%20caramel%20was%20soothing.%20But%20eating%20it%20was%20better!%20I%20ate%20crisp%20for%20breakfast%20for%20days.%20I%20might%20keep%20making%20this%20until%20my%20oatmeal%20supply%20runs%20out.%3C/p%3E%3Cp%3EA%20crisp%20autumn%20day%20and%20a%20warm%20gooey%20dessert%20go%20together%20whether%20your%20view%20is%20of%20the%20chilling%20Bosphorus%20or%20of%20colorful%20fall%20leaves.%3C/p%3E%3Cp%3EIn%20the%20same%20bowl,%20combine%20all%20the%20dry%20ingredients%20for%20the%20topping%20then%20use%20your%20fingers%20or%20a%20pastry%20cutter%20to%20blend%20in%20the%20butter.%20Once%20everything%20is%20incorporated,%20sprinkle%20over%20the%20top%20of%20the%20fruit.%3C/p%3E%3Cp%3EBake%20for%2040-60%20minutes%20depending%20on%20your%20oven.%20I'd%20check%20it%20after%2040%20and%20let%20it%20go%20longer%20as%20needed.%20You%20want%20the%20crumble%20top%20to%20be%20golden/browned%20but%20obviously%20not%20burned.%3C/p%3E%3Cp%3E*The%20type%20of%20apples%20you%20use%20will%20affect%20both%20the%20flavor%20and%20consistency%20of%20the%20dessert.%20Some%20apples%20cook%20mushy%20while%20others%20retain%20a%20crispness.%20The%20sweeter%20the%20apple%20you%20use%20the%20less%20sugar%20you%20need.%20You%20can%20also%20add%20nuts,%20dried%20dates,%20(dried%20or%20fresh)%20cranberries...go%20wild.%3C/p%3E%3Cp%3EFor%20the%20caramel:%3C/p%3E%3Cp%3E1%20Cup%20granulated%20sugar%3C/p%3E%3Cp%3E8%20Tablespoons%20butter%3C/p%3E%3Cp%3E120%20ml%20(1/3%20Cup-ish)%20heavy%20cream%20Over%20low%20heat,%20heat%20the%20sugar,%20stirring%20constantly%20with%20a%20rubber%20spatula.%20This%20is%20going%20to%20take%20forever.%20Just%20keep%20going.%20Stirring%20constantly%20is%20important%20because%20you%20really%20don't%20want%20this%20to%20burn.%20When%20melted%20it%20should%20be%20a%20nice%20golden%20brown,%20well...caramel%20color.%3C/p%3E%3Cp%3EAdd%20the%20butter%20and%20stir%20until%20it%20is%20all%20incorporated.%20Be%20careful%20with%20this%20part%20because%20adding%20the%20butter%20will%20make%20the%20melted%20sugar%20go%20crazy.%20It%20will%20splatter%20so%20watch%20your%20hands.%3C/p%3E%3Cp%3EOnce%20butter%20and%20sugar%20are%20fully%20incorporated,%20slowly%20drizzle%20in%20cream%20which%20will%20make%20the%20mixture%20boil%20and%20rise.%3C/p%3E%3Cp%3ELet%20boil%20for%20one%20minute%20then%20remove%20from%20heat.%3C/p%3E%3Cp%3EOptional:%20add%20salt%20to%20taste%20if%20you%20want%20salted%20caramel%3C/p%3E%3Cp%3EThe%20caramel%20can%20be%20stored%20for%20up%20to%20two%20weeks%20in%20an%20airtight%20container%20in%20the%20refrigerator.%20You'll%20probably%20have%20to%20reheat%20it%20before%20pouring%20over%20anything.%20Or%20you%20could%20just%20spoon%20gooey%20caramel%20goodness%20and%20eat%20it%20straight.%20I'm%20not%20saying%20I%20did%20that...but%20you%20could.%3C/p%3E){kind=link}
