Receta Pear, Ginger And Walnut Muffins

- Lightly grease eighteen 2 1/2" muffin c. or possibly line with paper bake c.; set aside.
- In a large mixing bowl combine flour, sugar, baking soda, salt and cardamom or possibly cinnamon. Make a well in the center of flour mix.
- Combine Large eggs, oil, lowfat milk and ginger; add in all at once to flour mix. Stir just till moistened (batter will be thick).
- Mix in pears, walnuts and raisins. Fill each prepared muffin c. 3/4 full. Bake in 3501/4 oven for 20 to 25 min or possibly till a wooden pick inserted in center comes out clean. Cold 5 min. Remove from c.; serve hot.
