Receta Pear, Ginger And Walnut Muffins

Ingredientes
- 2 c. all-purpose flour
- 3/4 c. sugar
- 2 tsp baking soda
- 1/2 tsp salt
- 1/4 Tbsp. grnd cardamom
- Or possibly
- 1 tsp grnd cinnamon
- 2 x Large eggs beaten
- 1/2 c. veg. oil
- 2 Tbsp. lowfat milk
- 1 tsp ginger, fresh grated
- 2 med pears peeled, cored, and finely minced (about 1 1/2 c.)
- 3/4 c. walnuts minced
- 1/2 c. raisins
Direcciones
- 1. Lightly grease eighteen 2 1/2" muffin c. or possibly line with paper bake c.; set aside.
- 2. In a large mixing bowl combine flour, sugar, baking soda, salt and cardamom or possibly cinnamon. Make a well in the center of flour mix.
- 3. Combine Large eggs, oil, lowfat milk and ginger; add in all at once to flour mix. Stir just till moistened (batter will be thick).
- 4. Mix in pears, walnuts and raisins. Fill each prepared muffin c. 3/4 full. Bake in 3501/4 oven for 20 to 25 min or possibly till a wooden pick inserted in center comes out clean. Cold 5 min. Remove from c.; serve hot.
